After the soup, next THE thing would be something v hot and spicy.What would I not give for that crunchy pakodas with tea! Oh well since, its me who has to actually do something about my own cravings ( dont we miss mom’s at such times!!!! ), I usually skip it most of the times. Well yesterday, it was again the same story all over again, but I couldnt keep the craving quiet. So the end of the day saw me making something real spicy for dinner !
So, I made hot and spicy Chilli Baby lima beans curry and which will be my entry for Tami’s Chilli Cook Off Event. It met my cravings and also satisfied my consciousness of healthy eating and not going in for fried stuff ( although am still game to it provided someone else is making it for me!

Now to the recipe
Method
1.Cook the beans in a saucepan. Boil till soft and tender. Set aside
2.Heat olive oil. Saute onions till soft.Add tomatoes and carrots till soft.
3.Add the puree, jalapeno chillies, the spices and salt. Saute for another 5 min.
4.Add the beans. Cook for another 5 min.
5.Serve after garnishing it with the mint and cilantro leaves.
V simple, Healthy , Quick and Yum!
