There is something so satisfying about knowing that you had something v nutritious and healthy today to eat. Yes, we all need our spoilers, those rich foods which draw us in with their copious amounts of dainty and flavors. But at the same time, knowing that every spoon that goes into your mouth is full of health - the food which is loved by our body is unparalleled. And simple soups play a huge role and this Potage is one.


Potage or Pottage is French implying thick (creamy soup ) made in a pot with an assortment of vegetables with or without meat. It is very easy to make with a key ingredient 'thyme'. This herb helps to relieve one from cold,thereby,a good one for Winters. If you have leftover veggies in your fridge, the day before you do your veggie shopping, then using them for this soup would be a good idea.

  • Serves: 2 people
Ingredients
  • 1 medium leek. choppped with greens
  • 1 medium carrot
  • 1 parsnip, peeled and chopped
  • 1 medium potato,chopped with skin
  • 1 celery, chopped
  • 3-4 garlic,minced
  • few sprigs of thyme
  • salt and pepper to taste
  • 1 tbsp butter
  • 1 bay leaf
  • 2 tbsp fat free milk
Method
1.

Spray PAM in a non stick shallow pan ( or olive oil for the good monosaturated fat )/Butter. Add the leeks,celery,parnisps,potato,garlic,carrots and saute well along with some salt. Close the lid

After 3-4 min, add few springs of thyme and bay leaf and pour 2 cups of vegetable stock/water and close the lid again.

Simmer till the vegetables get soft. Remove the thyme and Bay leaf Process it in a food processor and then pour it back in the pan. Add the milk. Season to taste and serve warm.
