“Eat breakfast like a king, lunch like a prince, and dinner like a pauper.”
– Adelle Davis (1904-1974)

Knowing and following some proverbs and idioms are good enough, but I have come across few who take them literally! which does not help always. Like the one above. I knew of one person (cant take names of course!)who gorged himself with “Royal” feast in the mornings and when I asked him that wasnt that bad for the health,he gave me this ‘Dont u know anything girl? ” kinda look and threw this quote to my face!

Oh well, it is of my opinion that the above meant a very “good” breakfast which is “royal” to your body and soul and not JUST for the tongue! Anyways coming back to my kitchen – Eggs form a regular part in my best half’s diet. ( not mine! I am not an egg lover). Eggs are powerhouse of Nutrients. But if your diet includes having eggs often enough it is better to reduce the egg yolks. The whites are the best with minimum calories but multifold of health.

For this reason, I make my omelettes with mostly egg whites depending on how many was already consumed during the week. Herbs form the basis of any cuisine around the world. They have their benefits too and are not just added for the color or smell. They have their own medicinal properties.

Ingredients
  • 3 egg whites ( or you can use a combo of 2 whites,1 yellow or any other of your choice )

  • 1 tsp of mixed herbs ( like thyme,terragon,cilantro/parseley )
  • 1/2-1 tbsp finely chopped onions
  • 1 cherry tomato, sliced thinly
  • 1/2 green chilli, sliced thinly ( or as per taste – optional)
  • salt and pepper to taste

Method

1.Beat the egg whites lightly along with salt and pepper.

2.Spray non stick with PAM ( or Olive oil/butter). Pour out the egg mixture.

3.Sprinkle the onions,tomatoes,chillies and herbs.

4.Let it cook and then turn the other side. Or you can serve without doing the same. Your preferance.

5.Serve it alone or with whole wheat Toast and a pot of coffee/tea.

Now thats “Royal Breakfast For the King” – Dont you think ? I have to take my husband’s verdict on this one which was – “mmmmmmmh” .

( Translation – Soft and Tasty with perfect amount of salt and pepper. Dont know what the rest of the stuff you put into – dont gimme names – cant remember all that – but make this same thing next time too. Guess thats enough for me :-D )
