I have a bad habit for going overboard when it comes to berries. Something about the aroma and the color gets to me causing overzealousness. After eating one's weight, what are we to do with the rest before it threatens with rotting? Make different Strawberry recipes, of course. If you were not able to finish your stash from making Stewed Rhubarb and Strawberries, Stewed Strawberries, Strawberry Chia Jam, Strawberry Lemonade, Strawberries Creme Frappuccino, Strawberry Galette, Very Berry Coffeecake....OK OK I will stop..., you can use them to make these delicious popsicles.

The best part of the recipe is that it is RIDICULOUSLY EASY! The part where it very delicious and nourishing comes next, but I really don't have elaborate much here if you can see the ingredients. This is one fun treat I don't mind feeding my family.

  • Yields: Makes around 6-8 popsicles depending on the size of the molds
Ingredients
  • 16oz Strawberries
  • 1 cup Greek Yogurt - See Tips
  • 3 tbsp Cane Sugar, or to taste
  • 1/4 tsp Vanilla extract (optional)
Tips
1. Greek Yogurt: I use full fat whole milk greek yogurt. You can instead use regular yogurt (may be around 2 cups) or use Vanilla Yogurt instead.
Method
1. Wash and coarsely chop the strawberries.
2. Add it to the blender along with the yogurt. Refer the tips section for other options other than greek yogurt.
3. Blend it. Give it a taste and add sugar as needed. Though my strawberries were very sweet. cos of yogurt I added around a heaped 2 tbsp powdered cane sugar along with a little vanilla extract.
4. Pulse it again few times until well blended. Now pour this into the popsicle mould.
5. Depending on the size of your mould, you might need less or more of the mixture. Increasing it as simple as adding a little more yogurt/strawberries and blending it.
6. Now freeze this mixture overnight/ about 8 hours.
7. Its very easy to remove it from the mould. Simply run it under room temperature/warm water for few seconds and you should be able to remove it easily.
8. Your popsicle is ready to enjoy!
This is one guilt free treat for the health conscious adults and a nourishing yet a fun dessert for the kids.

DK , don;t tell this Popsicles are so easy to make.It is very hard to resist and on showing them to my son, he yelled at me saying please make that soon.I will make them as I told him that u have been eating aunty's banana bread and now popsicles, ha ha ha.
