Mashed Potatoes With Garlic and Chives

Scene 1: Creamy dreamy potatoes, mashed and bathed in a tub of butter and milk, some additional instant salivator (saliva + generator = salivator!!!!!! says who? MeMe ;-) ) with spoonful of sour cream, pinch of salt and pepper to complete the “soul food”! Perfection! Sheer Bliss! Heaven!……….Scene 2 A “heavy weighing machine” looking back at you with a smug look (The machine is stuck! I don’t think its me!) a few days later…..Hell!

Has this happened to you? Its happened to me not once, twice but more times I care to remember! You would think I would have learned the lesson by now..right? Nah! Read the first line – U think I would care to learn some lesson! Life’s not worth it! Anyways my first encounter of the fact that Mashed Potatoes is an all and all American favorite was during my first Thanksgiving season here in this country. I know of at least 4 families (neighbors) who treated us to Mashed Potatoes during Thanksgiving time along with few other delicacies. I fell in love with it at first bite! But since its always the war with that stupid brutally honest machine in a corner of my bathroom, and my uncompromising tongue, I had to make adjustments which wont “burden” my machine nor “deprive” my taste buddies.

The following is my fav recipe where though I cut down on loads of butter and other fattening calories, the taste will not tell you that it has been compromised. Adding some garlic enhances its taste. Simple, Easy…Good enough for treating guests and also not “weighing you down” with guilt! Go ahead and give it a try will you :)

    Ingredients

  • 4 large potatoes, peeled and cubed (about 5 cups)
  • 1 tbsp butter, room temperature
  • 1/2 cup part-skim milk,warm
  • 1/4 cup buttermilk
  • 3-4 garlic (less or more as per your garlicky tastes)
  • 3-4 tbsp chives
  • salt and pepper to taste


Method
1. Place the chopped potatoes in cold and bring it a boil – about 10min. Reduce heat and simmer for another 10min until soft.Drain and set aside.

2.Meanwhile remove the outer skin of the garlic and place in a little water and M/w for 5min until soft.

3.Grind the softened garlic along with some buttermilk.

4.Mix the butter with the milk until dissolved completely.

5.Now add both milk and garlic-buttermilk to the potatoes and mash them. Season to taste. Mash them into creamy consistency or with lumps. Garnish with chives and ta-da – you get a festive dish.
