Orange Loaf Cake

I first saw this recipe in a Eye doctor's place!(Really!). Went for my regular annual checkup and they had these plethora of mags lying around among which was this Taste of Home edition. I was flipping through it when I saw this recipe. It clicked immediately and since I had no paper or pen to note it down, I used my phone camera to copy the same. The only changes I made to it(and that's only cos I wanted to use all my oranges and nothing else!) was to increase the Orange juice and decrease the no. of eggs whites from 4 to 2 to accommodate more Orange juice. I also added Orange zest for that extra zing.The rest was just right for me.

Ingredients
  • 1-3/4 cup Cake flour (Check here for Cake flour substitutions)
  • 1 cup Sugar
  • 2 tsp Baking Powder
  • 1/2 tsp salt
  • 1/2 cup Vegetable Oil
  • 1 cup Orange juice
  • Zest of one orange
  • 2 egg whites
  • 2 tbsp confectioner's sugar for dusting

Method
1. In a mixing bowl, combine the dry ingredients
2. Add oil and orange juice, beat until smooth.
3. In another bowl, beat the egg whites until stiff peaks form.
4. Fold it into the Orange mixture.
5. Pour the batter into a greased loaf pan.
6. Bake for about 1 hour in a pre-heated 350F oven, until a toothpick inserted in the center comes out neat.
7. Cool for 10 minutes, dust the loaf with confectioner's sugar and enjoy! :)

not that gud as urs.....still i got only 1 piece.......added pomegranate just to consume them before spoiling;D...... but dnt like their color after baking.....:):):)thnx:D

yes! i made it. beautiful. since i did not hv loaf tin so made it in 9" square cake mould and it got done in 30 min . the aroma !? :roll: dont ask just make and find out. the colour on the top is so nice. i wanted to join a baking class but where i stay i dont know the local language so decided against enrolling . but with chefinyou website i need no more classes. sometimes i feel so overwhelmed after cooking your recipes , i feel how can i thank u enough.

hai DK very nice recipe... i want to try it but i dont want to use egg...can u plz tell me it will work....or ican use any substitute.......i can use that substitute for some other cake recipe of urs. thanks

The beauty of the cake is that the egg whites add that amazing texture to the cake. But if you want to make a substitute you can use 1/4 cup of orange juice or apple sauce or silken tofu. Hope this helps :) --DK

hi dk...my first post to u...i did this today..but the cake colour was kind of brown...and i used all purpose flour and the cake was too moist...can u plz tell me the consistency of how the cake batter should be...mine was bit thin...and i baked it for more than an hr in 350...plz help me ....

The cake will be brownish with little touch of orange on the sides. I think the problem was with using all purpose flour. It comes out best with cake flour. But in case it is not available, though u can use APF, it cannot be done on 1:1 ratio. To make correct substitution pls use : 1. Place 2 tbsp cornstarch in 1 cup and fill the rest up with All Purpose flour 2. 1 cup all purpose flour minus 2 tablespoons You can refer this link With Baking Substitutions for other such Ingredient replacement. http://chefinyou.com/2009/07/substitutes-in-baking-101/ . @foodierunner : Cake flour and self raising flour are different.Cake flour has low gluten which makes it possible for those tender textures in the cake while self raising flour is APF with some baking powder. If you dont find cake flour, then use the following substitution :

For every cup of cake flour use one cup (minus 2 tbsp) all purpose flour.

As for your intrepretation of my dialog - me and Mr. right had a good laugh over it. I am vegetarian - so man eater I sure am not! Anyways u missed the essence of the conv :)

Hi rupa : For every cup of cake flour use one cup (minus 2 tbsp) all purpose flour. This is the closest to the texture that u can get...:) For egg whites..mm..U can use 1/4 cup extra oil/Orange juice. The whipped whites add a lot to the texture..but the taste would still be good :) Give it a try.

Lovely cake! Is Cake Flour what we call self-raising flour in the UK do you think (ie flour with raising agent in it)?

I got inspired by your 'pantry-cleaning' when you told me the other day on phone. I had so much stuff, which I wanted to get rid of asap.
