Spinach Spaghetti Pasta soup with Paneer recipe
Till date I have been unable to decide if I really like to cook or if I like to feed my loved ones more. Why this lingering doubt? Well if I really liked to cook, then I should love to cook all the time right, including when it comes to making something for myself? Naah! I hate cooking for myself and suddenly find myself to be one of the laziest bum around! I HATE it. Period. That's when I start wishing my dear mom was around to pamper me with her delicious food while I display my slothful tendencies :) Its time like these when I tend to think that I indeed enjoyed pampered childhood (which trust me I never did...but as I said as an afterthought it makes me think this way). To have warm food waiting all ready for me when I got home from work  in those days seems like a blessing to me now. I could just ask my mom to prepare some specific dish cos I was craving for it and find it waiting for me when I got home late at night tired and worn out. It was such a pick me up. Makes me so nostalgic and sad sometimes. Now if I crave something, I have no choice but to move my otiose backside to make it myself which makes "craving anything" not worth it!

But a girl's got to eat - so when it comes to making lunches for myself in the middle of work (working from home SUCKS!), I tend to put its and bits together which give me the freedom to multitask. I started relying heavily on soups and salads for such times. This creation was a result of one such moment. Its immensely simple, quick and nutritious. I adapted this recipe from Giada of Food Network whose original included Chicken and lots of cheese. I left out the cheese since I was using Paneer to substitute Chicken with it and used Spinach Spaghetti instead of regular.

  • Serves: 2 people
Ingredients
  • 3 cups vegetable stock/water
  • Juice from 1 large lemon (or as per taste)
  • 1 dried bay leaf
  • 1 carrot, cubed
  • 1 onion, chopped
  • 1 celery, sliced
  • 1 small jalapeno, sliced (optional)
  • 1/2 cup - About 1-1/2 ounces spinach spaghetti, broken into small pieces
  • 3/4 - 1 cup cubed paneer
  • salt, pepper to taste
  • cilantro to garnish
Method
1. In a saucepan, bring the stock, lemon juice, bay leaf to boil. Add the carrots, jalapeno, paneer and celery, simmer until tender.
2. Add the broken pasta and cook until the pasta is tender, for 4 to 5 minutes, stirring occasionally.
3. Remove the bay leaf.

Dear DK i Make made this soup so many times, but had not clicked any pic of it. Did it last nite so im posting it today. The soup is awesome and everybody at home have become its super fan. But the only variation which i did is instead of spinach spaghetti i used normal wheat spaghetti and also added corns. Thanks for the wonderful recipe.

hi, sounds like a great recipe. one query- when do u add the onions to it(since its mentioned in the ingredients)? is it a part of the stock or u r putting it separately? if separately, when do u add it? thanks!

It was an absolute pleasure going thru ur site :) Was just wondering what kind of vegetable stock do u use ? Will the stock cubes give the same flavour as home-made stock :?:

I always use the stock I make at home - have never used the store bought stuff hence personally have no idea. But there is no specific recipe for vegetable stock that I use cos each week it differs based on the vegetables I have on that weekend. I make my stock with leftover veggies on the previous day of my grocery shopping. So there will def. be subtle change in flavors when the vegetables used are different :) --DK

Could you suggest a substitute for jalapeno ?

regular green chilli should work too...Jalapeno is just to add heat to the soup. You can add whatever you like to add the heat, if needed :)
