Easy & Healthy Watercress Potato Soup recipe
I love soups - all variety included. Recently when I visited my local grocery store, I saw some fresh watercress. The fresh watercress adds a beautiful color and taste to this soup.  I have kept it very simple unlike many other recipes I found online where butter and cream ( few others with milk) have been used liberally to make it creamy. Whenever I want to make something creamy, I go for potatoes (or low fat milk) instead of cream and butter. Don't get me wrong - I love the real "cream" soups too. I do make them but they are a rare / occasional treat. For day to day eating, I keep those ingredients at bay.
Easy & Healthy Watercress Potato Soup recipe
Watercress steals the show in this soup with onion and potatoes adding heartiness and creaminess to its body. You can add vegetable stock instead of plain water to add more flavor. I did not have any on that particular day hence just stuck to water. Watercress is immensely nutritious and healthy. Here is an interesting breakdown of watercress and its benefits in this site. Without further blah's from me lets go into the recipe shall we? :)

  • Serves: 3 people
Ingredients
  • 4-5 cups of watercress, washed
  • 3 medium potatoes- chopped with skin, cleaned and well scrubbed
  • 1 onion, chopped
  • 6-7 cups of water/vegetable stock
  • salt and pepper to taste
Method
1. Take a skillet and add about 1 tbsp oil. Add the chopped onions and saute for 1-2 minutes.
2. Add potatoes along with salt and give it a toss for another 1 minute.
3. Add the stock/water. Close the lid and cook until the potatoes are tender.
4. Add the watercress to the broth after setting  aside few leaves for garnish - its optional of course. Cook for another minute until the leaves start wilting lightly.
5. At this point you can either use hand emulsifier to puree the mixture or transfer the contents of the broth to a blender and puree the mixture in batches.
6. Once done, transfer it back to the skillet and heat it for few more minutes.
Keep warm until serving and garnish with few watercress leaves. Add more salt/pepper according to taste. Thick creamy soup ready :) Easy & Healthy Watercress Potato Soup recipe

As i wasnt sure of watercress, I substituted the soup with methi...another healthy green....and it turned out to be to good...quite a nutritious soup...very simple and not time consuming...was quite happy the way it turned out and looked the same as watercress soup in the picture... t

I want to know more preparation of jalkumbhi. Is watercress and jalkumbhi (found in rivers og Bihar) are same?

This is a good soup that I think could be better if I used different potatoes. I used big, waxy white potatoes - not baking potatoes. So, they were a little glue-y after being puréed. Would baking potatoes be the way to go? I used lots of fresh watercress - grabbing a handfull counted for 1 cup for me.

Jal-Kumbhi, Jal-halim-saag, Chansaur. This is what I got from the net. I am not sure if its available in India. I think the closest green to it would be methi cos they both have a bitterness to them
