Belgian Style Saffron Waffles Recipe
Although I wanted to take an elaborate set of "beautiful" pictures, I have valid reasons for not doing so. It was morning, it was a weekend and I am NOT a morning person. I am NOT into photography either.Period. Talking about which - I am well aware of many bloggers who have extended their interest past food into the beautiful world of photography. Guess I seem to be missing that particular chip! Inspite of repeated request from my husband I just don't get that urge to put my time/effort into learning that creative art! I wonder why! It just seems to stop with food. I am not even into styling  the food!! Someday, I am hoping time and continual sub standard photos will put some sense into my brain, but until then - this is how things are going to stand :)
Belgian Style Saffron Waffles Recipe
Before I lose myself and bore you with ton more "excuses" lemme get into the main aim of this post - Graham Saffron Waffles. The photos don't do it justice but the taste does. Another item in my pantry which was waiting to be used was Graham Flour. Graham flour is a less processed and unbleached version of the regular wheat flour - which means -  more germ and bran for you. In short, it translates into "Healthy, Nutritious and Better"! :) Its a tad sweeter and more chewy than regular flour and I LOVE it. It can be used to replace the regular wheat flour in any recipe. Just keep in mind that the end product will be little more browner, little more sweeter and yes more dense! Although I have to say, this waffle has become a keeper for us. Its so chewy and hearty with a hint of saffron that it proved to be a special breakfast. We enjoyed it with fruits (blueberries and strawberries with a little powdered sugar dusted on top) and ginger tea but I am guessing a few drizzle of maple syrup would work very well too (or honey). Changes I Made The original recipe is from Ehow and the changes I made were minuscule. The whole eggs were replaced by egg whites. The sugar was replaced by honey 2 out of 3 times I made them. And I think I may have exceeded in the saffron requirement. Instead of 6 strands, I think I put a generous pinch!

  • Yields: makes about 4 (7 inch diameter) Belgian style waffles
Ingredients
  • 2 cups whole wheat graham flour (or use regular whole wheat with bran/germ added)
  • 4 egg whites
  • 1-1/4 milk
  • 1/3 cup olive oil
  • 3 tbsp. sugar ( I used honey another time and loved its combo with graham)
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • pinch of saffron
Method
1. Mix up the dry ingredients in a bowl.
2.

Heat the milk to lukewarm and add the saffron to the milk mixture. Give it a good stir. Set aside.

Note:

If replacing the sugar with honey, then skip adding the sugar to the flour and instead add equal amount of honey to this milk mixture.

3. Beat the egg whites with a fork for 2-3 minutes until fluffy
4. Add the milk to the flour mixture.
5. Next add in the oil.
6. and then fold in the egg mixture.
7. Stir it until everything is well incorporated.
8. Prepare your waffle iron as per the manufacturer's instructions and drop the batter to it. I dropped about 3/4-1 cup of batter. It will vary depending on your make.
9. Cook as per instructions and waffles are ready.
They were crispy on the first bite and then chewy. The saffron not only added a beautiful yellow/orange color to the waffles but enhanced its taste. You can enjoy it as they are, but we preferred it with few berries (sliced strawberries and blueberries), a little dusting of powdered sugar and maple syrup. And oh yes - a glass of freshly squeezed orange juice completed our yummy breakfast :) Belgian Style Saffron Waffles Recipe

please let me know what to use instead of egg whites

You can try bumping up both oil and milk to substitute the eggs. or you can try my Mango Waffles recipe (which is eggless) to try out this version
