Homemade Waffles | How to make Waffles
One of the classic American breakfasts is Waffles. It just happened that I ate them for the first time after 3 years of my stay in the US.  And that too the frozen ones that my husband once bought during the days when I was buried deep with work from my new job. Life was immensely hectic and I found myself hardly cooking decent meals. But these frozen ones changed my attitude. My husband's face when I saw him heating these up in a toaster saddened me. I, of course ate them since I knew nothing better but he cursed saying that "These are NOT waffles!". That piqued my interest and soon I got myself a waffle maker. I realized that nothing - absolutely NOTHING was worth eating unhealthy and sad meals. On a side note -  Thank you Amazon for making our lives so much easier (a tad lazier yes, but lets not go there now!)

So with new resolution in place, I started whipping up balanced breakfast meals and the first waffle I made were these basic ones -  the recipe for which comes from the instruction booklet. I used it verbatim the first time around but soon with repetitions I startedchanging it up a tad bit. I love this recipe cos it makes spongiest, fluffiest waffles. Its not sweet (may be v. mild) and hence it makes a great base for fruit compote, maple syrup, jams, fruit stews and anything else you might come up with to eat with waffles. Belgian Style waffles tend to be heavier and hence 1 waffle is enough to fill me up (along with 1 fruit and tea).

  • Yields: About 4 (7 inch diameter) Belgian style waffles
Ingredients
  • 2 cups All-Purpose Flour
  • 1 tbsp Sugar, or other sweeteners (See Tips)
  • 1 tbsp Baking Powder
  • 1/4 tsp Salt
  • 1-3/4 cups 2% Milk (see Tips)
  • 4 Egg whites (See Tips for Substitutes)
  • 2 tbsp Vegetable Oil
Tips
1. Sugar - You can use any other natural sweetener to replace the refined white sugar. I tend to lean on honey, agave, Sucanat, maple syrup or fruit purees. You can also use Splenda (I assume).
2. You can of course use Whole milk, but I only carry 2% milk fat hence use the same. You can instead use Rice, Almond or Soy milk to make it Diary free/ Vegan
3. Pls refer my Egg Substitutions List to make this Egg-free. If you simply want to replace the (2) Eggs with additional 1/2 cup milk, you can certainly do so but make sure to grease your waffle iron well cos since there is no fat in the waffle (absence of eggs), it tends to stick to the maker. Though you can bump up fat by way of butter and additional oil, I would suggest using Ener-G Egg Replacer and Flax Seeds are ideal substitutes in order to avoid fat calories.
Method
1.

Combine flour, sugar, baking powder and salt in a large bowl.

Note: If using liquid sweeteners like honey, agave etc, I usually tend to add them along with the wet ingredients.

2. Whisk the egg whites for few seconds until frothy.
3. Add milk and oil to it and give it a mix until blended.
4. Now add the wet to dry ingredients.
5. Mix until well combined.
6. Prepare the waffles as per the instructions of your waffle maker.
7. And cook until done.

I substituted Agave Nectar for the sugaralmond milk for regular milk, and instead of using 4 egg whites i used 4 eggs (egg yolk and egg white). They were very delicious!  \"smiley\"

I made these waffles using a 2-square Begian waffle maker.  Doubled the ingredients.  I added a cup of dark chocolate chips (why not?).  Cooked one batch to a golden brown for that day's breakfast.  Cooked the second batch to a light brown.  When the second batch cooled I wrapped each waffle in wax paper and put into a freezer bag.  The kids take out one or two for breakfast on school mornings.  Pop into the toaster on the frozen setting.  They come out hot and golden brown.  Fabulous recipe!

Actually my husband finds them bland as well (not dry though). But then every single recipe of waffles to us tastes bland if no additions (or topped with syrup or sauce) has been made. So, see if this helps - I usually chop strawberries into small pieces and toss few blueberries as well to this batter. It adds more moisture as well as flavor to these waffles. --DK

I made these waffles using 1 cup spelt flour and 1 cup whole wheat flour. I also swapped out the milk for almond milk. They turned out great. I freeze them and pop them in the toaster in the morning. Great healthy breakfast with no fuss.

Im not a vegetarian, however these are the best damn waffles I've ever had. I ran out of eggs and swapped 'em for milk. The waffles were crispy, and amazing with some butter. Another plus to this recipe, it makes four waffles perfectly in a common cheap-o iron. Any other recipe out there makes 3.5 waffles.

this looks so yum and being a vegetarian (am not to keen on eggs but thats another story of mine) your substitutes and tips do help in making things much easier and i have a nephew, a niece not to mention my daughter and the rest of the family who are real foodies.. so this make for a good Sunday breakfast idea without compromising on making two batches of the batter. thanks so much for sharing it with us.. I am surprised to see you surprised Steven. I have never said that I avoid white flour - I enjoy everything - the ones that are empty calories in moderation though :) But I am not for eliminating anything in my diet - just prioritize them
