My daily blog-hunt bought me to this wonderful eggless banana-walnut cake from Mahanandi and i was hooked. My husband loves all the bread experiments I make, so I thought why not make it into a bread recipe. Made couple of variations and the Bread was ready. My variations were inclusion of cinnamon, which I love for its heavenly smell, and wheatgerm. From the moment, I got to know its health benefits, it has been a regular addition in my recipes.  The end result was , that it got over even before I had time to admire it!. This is my entry to Coffee's this month's MBP-Bread and to Ahaar's JFI-Banana

  • Yields: Makes one 9X5 -inch loaf
Ingredients
  • 1 1/2 cup All-purpose flour
  • 2 tsp Baking powder
  • 1/2 tsp salt
  • 3/4 tsp ground cinnamon
  • About 2 tbsp wheatgerm
  • 5 tbsp butter, at room temperature
  • 1/2 cup sugar ( or light brown sugar )
  • 3 ripe bananas, pureed
  • 1/2 -3/4 cup chopped walnuts
Method
1. Preheat Oven to 400F. Grease a bread/loaf pan Sift the flour along with baking powder,salt,cinnamon in a bowl and then
2. add the wheatgerm
3. In another bowl cream the butter along with sugar and beat till light and fluffy
4. Add the pureed bananas and chopped walnuts and mix.
5. Now add the dry ingrediants and stir to incorporate all together
6. Pour them into the loaf pan
7. and bake for 45-50 min or until a wooden skewer inserted in the center comes out clean.Cool and serve.

i dnt had walnuts so replaced with  almonds :) :) it is moist n yummm :)

Hi there! I just made this recipe.. A few things went wrong.. 1st - I took regular granulated sugar and when I tried beating it with the butter, it didn't became fluffy at all.. Could this be because my granules were too big? 2nd - I threw that butter sugar mix out and then proceed to use powdered sugar and beat it with the butter..it became nice and fluffy but then when I mixed the bananas in, I noticed that ithe mixture had this small white lines in it.. Is this the result of beating e butter and sugar too much? Anyway I proceeded to pour this into the dry mix and when I mixed it all together it was more like a slightly wet roti dough.. Not at all pouring consistency.. So I added a s,all puréed banana and a teaspoon of milk.. It became wetter but again not really liquids pouring consistency.. What on earth could I have done wrong? I checked the quantities 3-4 times before starting the whole thing.. Please help! I'd love to get this recipe right!!!

iam planing to make tis receipe..but dnt have wheat germ..Can I subsitute it wid sumthing..?? Neither do ihaɶe flaxseed or oats...can cornflakes be used in it or crushed cornflakes...Please tell me..

Hii DK I was looking for some good banana bread recipes and I came across your blog. The recipes are quite impressive. I was hungry seeing many of the photos :) Just baked the bread, it smells great! I can't wait to eat it (its still hot!) It raised well and fortunately its still that way :) My experience with banana cake/ bread has been bad. The cake always fell flat. I didn't have wheat germ so I used half all purpose, half wheat flour (for pseudo healthy feel). Thanks a lot for this great recipe. Thanks for your sweet comment Swati. hi yar..u doing a very good job...r u from any culinary school or wat..being an indian..u r baking each and every kind of baking..i seriously wonder...how could u just decorate very nicely without any experience......u r doing excellent..m trying to make simple banana bread and i have doubt that whether should i need to add baking soda or not and also plz do let me knw the ingredients and also the measurements...thnx in advance. Hi Jo..

Wheat germ is the embryo of the Wheat grain. Although it is not essential or Important to use this ingrediant in Baking, its a good idea to make use for the sole purpose of the nutrients that it contains. It is rich in Vit B1,B2,B6, contains Octacosanol (food molecules which benefit our body immensely),Vit E,protien,Vit A manganese etc.. PHEW! isnt the list awesome...

I use it in my baking as and when I can. U can substitute equal amount of All piurpose flour instead of wheat germ :)

Yeast is used to assist in the process of fermentation, the absence of which will cause longer wait for breads to rise
