My daily blog-hunt bought me to this wonderful eggless banana-walnut cake from Mahanandi and i was hooked. My husband loves all the bread experiments I make, so I thought why not make it into a bread recipe. Made couple of variations and the Bread was ready. My variations were inclusion of cinnamon, which I love for its heavenly smell, and wheatgerm. From the moment, I got to know its health benefits, it has been a regular addition in my recipes.

The end result was , that it got over even before I had time to admire it!. This is my entry to Coffee’s this month’s MBP-Bread and to Ahaar’s JFI-Banana
Method
1.Preheat Oven to 400F. Grease a bread/loaf pan Sift the flour along with baking powder, salt, cinnamon in a bowl and then

add the wheatgerm

2. In another bowl cream the butter along with sugar and beat till light and fluffy

Add the pureed bananas and chopped walnuts and mix.

Now add the dry ingrediants and stir to incorporate all together

Pour them into the loaf pan

and bake for 45-50 min or until a wooden skewer inserted in the center comes out clean.Cool and serve.

Hii DK
I was looking for some good banana bread recipes and I came across your blog. The recipes are quite impressive. I was hungry seeing many of the photos
Just baked the bread, it smells great! I can’t wait to eat it (its still hot!) It raised well and fortunately its still that way
My experience with banana cake/ bread has been bad. The cake always fell flat. I didn’t have wheat germ so I used half all purpose, half wheat flour (for pseudo healthy feel). Thanks a lot for this great recipe.
Thanks for your sweet comment Swati. Am glad u liked them
This bread is our fav too

No I am not from any culinary school and I have been baking now for about 2 yrs now! Its just practice and encouragement from fellow bloggers/friends. As for your query, I have a simple Banana bread lined up in my draft to be posted soon – so watch out for it. Its v simple and it was the first bread I ever baked. But if you are in a hurry, lemme know,I will e-mail you the recipe which I like
Thanks Anali
I am an absolute foodie and dieting is an alien word..but I want to have my cake and keep it too ( oh well what r cakes for anyways! ), so try a little smthing here and there to make me ‘guilt free’
to keep gorging away without ballooning myself up!
I love banana bread and yours looks really yummy and healthy, so it wouldn’t cause so much guilt! ; )
Hi Jo..
Wheat germ is the embryo of the Wheat grain. Although it is not essential or Important to use this ingrediant in Baking, its a good idea to make use for the sole purpose of the nutrients that it contains. It is rich in Vit B1,B2,B6, contains Octacosanol (food molecules which benefit our body immensely),Vit E,protien,Vit A manganese etc.. PHEW! isnt the list awesome…
I use it in my baking as and when I can. U can substitute equal amount of All piurpose flour instead of wheat germ
Yeast is used to assist in the process of fermentation, the absence of which will cause longer wait for breads to rise
Dhivi, planned to start off with banana bread…but i found one ingrediant missing…what is wheat germ????And let me know clear usage of yeast in baking dishes.
oh your version looks nice. I have added some buttermilk too. you have a nice blog. thanks for dropping by.
