the original recipe have whipped cream icing but to learn more abt icing i made butter cream frosting....people liked very much but honestly i didn't eat a single piece...bcoz i dnt like the frosting...sincerely i wud love to make it again with whipped cream frosting.....

  • Yields: 6*6 inch cake
Ingredients
  • 1. (150 gms) All Purpose flour 1cup +1/4 cup
  • 2. (150 gms) of Sugar 2/3 cup
  • 3. Corn Flour 2tbsp
  • 4. Eggs – 4,at room temperature (Yolks & Whites Separated)
  • 5. Baking Powder 1tsp
  • 6. pineapple flavor 1tbsp
  • 8. Sugar 1tbsp
  • 9. Crushed Pineapple(Canned or Fresh) 2cups
  • 10.pineapple juice 1 cup
  • for frosting(original)
  • 1. Whipping Cream Chilled 500ml
  • 2. Icing Sugar 4tbsp
  • 3. Pineapple Extract/Essence 1tsp
  • for frosting(i used)
  • 1 cup of unsalted butter(used amul butter which was salted but i guess better to use unsalted)
  • 3 teaspoons of pineapple essence
  • 4 cups of icing sugar
  • 4 tablespoons cream
  • few cherries for decoration....
Method
1.

Preheat oven to 350 Degree F.

Sift Flour, Corn flour(Corn Starch) & Baking powder  twice.

2.

In a mixing bowl, beat the egg yolks & beat till frothy & fluffy. Combine 2 tablespoons of sugar & continue to mix till the mix is thicker. Add the pineapple essence n beat for another 4-5 mins

In another bowl beat the egg white until thick and meringue-like & peaks form. This might take about 5-10 minutes.

Very gently fold in the egg yolks into the egg whites. Do not stir. Sift the flour, corn flour, baking powder mix into the egg mix.  Fold in the flour with a spatula or whisk to combine. Do not stir or move too much, so as not to let the air escape.

5.

Lightly grease the Cake pan.

Pour the mix carefully in the pan & put it in the oven.

Bake for 30 -35 minutes or till the toothpick comes out clean when inserted at the center of the cake.

6.

Cool n divide the cake horizontally into 3parts[but mine was only in 2 parts:(]

Place the bottom layer of the cake n pour 1/2 the pineapple juice on this layer of the cake.

7.

To Prepare the frosting:

Whip that butter with beater.add pineapple essence.then
add icing sugar and then add in the cream. Then keep mixing it until fluffy and thoroughly combined

8.

Divide the frosting in 2 Bowls.add chopped pineapple in one bowl.

9.

assembling of cake:

Spread the Pineapple Cream mix on bottom layer of the cake.
Spread more pineapple slices over the Cream. put the top layer of cake pour d pineaaple juice.spread the other cream on d sides n top of the cake decorate the cake with more pineapple slices n cherries:)

There is no butter used in the cake. Is this a typo or there is no butter needed to bake this cake? The picture looks too tempting and I really want to try out this cake. Just curious cause I have not known of a cake recipe without butter.
