This idea came to me while I was making Pumpkin soup and din't want to discard the skins...

  • Serves: 1 person
  • Yields: 1 cup
Ingredients
  • 1 cup Pumpkin skins (cut in 1/2 inch squares with little flesh)
  • 1 tsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp white sesame seeds
  • 1 pinch of turmeric
  • 1 pinch of asoefetida
  • 8-10 nos curry leaves
  • 1/4 tsp red chilli powder
  • salt to taste
  • sprinkle of sugar if desired
Method
1.

Heat the oil in a wok...now crackle mustard seeds and add asoefetida, turmeric sesame seeds, add curry leaves in quick succession (do not allow sesame seeds to brown)

2.

now add the pumpkin skins and stir fry in high flame...(to get roasted texture) do not cover the lid or cook in low flame this will soften the pumkins...

3.

once the skins are roasted and changes colour sprinkle in the red chilli powder, salt and sugar(if desired)

4.

serve hot
