But it came out fantastic and we enjoyed it so much that the whole bread was over the very same day! I couldn't for the life of me believe that I had managed to make a bread on my own. I had never heard of Ovens before marriage and never thought of baking being possible at home! The recipe is atrociously simple and it gave me that much needed confidence to start my baking journey. The outside of the bread is very crunchy thanks to the brown sugar topping and the inside is moist with specs of coconut. It slightly on the sweeter side and keeps quite well. It tastes even better the next day. This recipe is from the book "Home Baking" by Jeffrey Alford which I have adapted slightly as per our taste. The original recipe was for making 2 loaves. I halved it to make 1.
Cut it into slices and enjoy. As I mentioned earlier, its crunchy on top and moist on the inside. We enjoy it both for breakfast and during evening tea.

The butter should be soft and not melted. The soft butter along with sugar while beating creates the fluffiness which is needed for the recipe. The sugar need not be powdered.
