Eggless Banana Coconut Bread Recipe (Moist and Simple)
This recipe for the bread brings back memories. This was the VERY FIRST recipe I ever tried in Baking.  I know usually everyone starts off with probably a cake. I started mine with this bread. I did not have hand mixer that time and remember whisking the butter and sugar with my hand. aaah! My hands were screaming in few minutes - who knew baking was such a work out? It was a weekend when I started my baking journey and my better half was at home. I wanted him to be around in case I somehow managed to blast the Oven! Who knew what Ovens were capable of that time? So seeing me keeping weird faces and making all the "tch","tch" noises, he came to the kitchen and volunteered to help. Bless him!

He muscled his way through creaming the butter mixture while I sifted out other ingredients. Once done, I put it inside the oven and practically sat close by, peering into it every other second. My husband had a laugh at my nervousness. He kept teasing me and asked me if I actually believed that looking at the bread every second will actually cook it?. What does he know! Anyways, soon the aroma that wafted from the oven was so damn delicious! I was jumping around with ecstasy, exclaiming about who cares what the end result was as long as I had created something which smelt this delicious (;-)) Naive - I know! Eggless Banana Coconut Bread Recipe (Moist and Simple) But it came out fantastic and we enjoyed it so much that the whole bread was over the very same day! I couldn't for the life of me believe that I had managed to make a bread on my own. I had never heard of Ovens before marriage and never thought of baking being possible at home! The recipe is atrociously simple and it gave me that much needed confidence to start my baking journey. The outside of the bread is very crunchy thanks to the brown sugar topping and the inside is moist with specs of coconut. It slightly on the sweeter side and keeps quite well.  It tastes even better the next day. This recipe is from the book "Home Baking" by Jeffrey Alford which I have adapted slightly as per our taste. The original recipe was for making 2 loaves. I halved it to make 1. Eggless Banana Coconut Bread Recipe (Moist and Simple)

  • Yields: Makes one 9X5 inch loaf
Ingredients
  • about 4 bananas to make 1-1/2 cups puree
  • 2 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp freshly grated nutmeg (or use nutmeg powder)
  • 1/2 cup unsalted butter,softened
  • 1 cup sugar
  • 1/8th tsp white or rice vinegar
  • 1/2 cup dried shredded unsweetened coconut (I used dry coconut from Indian store)
  • About 1-2 tbsp demerara/cane/brown sugar for topping
Method
1. Preheat oven to 350F. Grease one 9 by 5 inch bread pan. Puree the bananas and set aside. In a bowl, combine the flour, baking soda and nutmeg.
2. In another bowl or stand mixer, beat the butter and sugar until light and fluffy. Add the vinegar and beat briefly.
3. Add the banana puree and flour mixture alternately,
4. about 1/2 cup at a time,
5. beginning with the banana, beating until smooth after each addition.
6. Stir in the coconut
7. Spoon the batter into the pan and smoothen the top.
8. Sprinkle the brown sugar on top
9. Bake for 50-60 minutes or until golden and the knife or toothpick inserted in the center comes out clean.
Cool it for 20 minutes , then turn it out on a wire rack to cool it completely and get firm.  See that golden crunchy top? Hi! I love your recipes! I subsritute sugar for les than 1/2 cup of honey and the sweetness is just perfect ( because I don't want it too sweet) but is it normal that the outside layer is chewy? I mixed the dough by hand and I baked for 55'minutes. I did not use sugar to coat on the top. I want to try this recipe again but I want it all soft and moist. Thanks for sharing!

:-P This is the second time I made this recipie.A friend of mine is alergic to eggs and for a long time has not had home made breads such as banana bread or like items. I try to have something different in the freezer for company and this fits the bill all year long!

Can i make this without coconut ? what could i substitute for it ? my hubby hates coconut in baked stuff hence the doubt :-D

I love to read and re-read this one (and every one;-), over and over again, DK! One day I'd like to give a try at using a whole grain flour or even a sprouted whole grain. A few days ago I made dehydrated "crackers" out of some splended sprouted wheat berries I had started several days before, and golden flax seeds (soaked and ground,) with chopped raw onion, too. The weather was good, so I left this out on a tray in the sunshine (on the urban balcony.) Now I'm thinking that I might use bananas and coconut and sprouted wheat berries, at least give it a try using small quantities. Bananas and coconut, though no flour, no eggs, and no sugar.

Hi DK, I tried this bread today. It tasted good...But it was quite dense and more like banana halwa :wink: rather than bread. I did not powder the sugar, could that be the reason? The butter also got melted accidentaly while defrosting on the butter, would it make a differnce? I used baking powder instead of baking soda...as per your substitution table.Could you please guide me. Somehow baking is always a disaster. :(

The butter should be soft and not melted. The soft butter along with sugar while beating creates the fluffiness which is needed for the recipe. The sugar need not be powdered.

Tried to make this with modifications last night for my daughter's diet (used coconut flour instead of regular flour and no sugar). It was so dry, so I doubled the number of bananas and added some applesauce. It was still a bit dry so I probably should have added more liquid. It didn't turn out too well, but I mixed in some pureed/cooked blueberries and it *almost* tasted like a cobbler. At least my daughter loved it. :)

I'm going to give this a try but replace the flour with coconut flour and leave out the sugar. We're following the Specific Carbohydrate Diet (my young daughter has ulcerative colitis and the diet is helping her). We are eating "banana cake" but I hadn't added some of the other ingredients you used. Unfortunately sugar and flour are off-limits, but I think the combo of other ingredients should make a nice change from what we're eating now! If it works out, I'll send the recipe to the other SCDers and credit your site for the original. Thanks!
