This was my first attempt to bake bread...the result yummilious...almost divine..:)
The delicious smell of bread baking was awesome ......the result ...food which saisfies the soul...

I am new to baking and this was a real treat which increased my confidence. The crunchy crust is too delicious. Loved it.

If you see my "related Posts" section on the left sidebar, you will notice that I have other Banana Bread recipes without coconut. You can try those :)
The butter should be soft and not melted. The soft butter along with sugar while beating creates the fluffiness which is needed for the recipe. The sugar need not be powdered.
