This beautiful, easy, seasonal dessert is low cal and healthy.

Ingredients
  • > 8 cups mixed fresh berries and black grapes
  • > 2 tablespoon vanilla sugar
  • > 1 1/2 cup fat free cream cheese (plain)
  • > 1 1/2 cup powdered sugar
  • > 2 tablespoon lemon juice
  • > 1 tablespoon finely grated lemon peel
  • > 2 tablespoon finely chopped fresh mint
Method
1.

Place all of the fruits in a large bowl (thinly sliced strawberries and keep the grapes whole). Add the vanilla sugar, mix well and refrigerate.

In another bowl, cream together the cream cheese and powdered sugar until smooth. Add the lemon juice, lemon peels and mint , and refrigerate.

Line up 7 parfait or stemmed wine glasses. Spoon about 2 tablespoonful of fruits into each glass, followed by 2 tablespoons of lemon cream. Repeat until the glasses are filled to your liking. Serve chilled
