These are moiste'st' and 'tender'est' muffins, I have made till date. I prefer these since they are not v sweet, so I make them with less sweet! Skip the egg and you have Eggless Blueberry Muffins, with no major changes to the recipe.

Make sure you make extra batch for your neighbors. I have to say that they will know anyway. How ? Start baking and 10 mins into the oven, the smell that engulfs the house is heavenly!Bet,it would bring the others to your place soon :-)

  • Cook time:
  • Prep time:
  • Yields: Around 9-12 muffins
Ingredients
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/4 cup brown sugar
  • 1/4 tsp Nutmeg
  • pinch of salt
  • 1 egg ( skip to make an eggless version )
  • 3/4 cup milk ( + 1/4 cup if skipping egg )
  • 3 tbsp Vegetable Oil ( make it into 5 tbsp if skipping egg )
  • 2 tsp cinnamon powder
  • 2 tbsp granulated sugar for sprinkling
  • 2/3 cup blueberries ( defrosted if frozen)
Method
1.

Preheat Oven 375F. Grease muffin pan with PAM Spray/Butter.Mix all the ingredients except Blueberries and granulated sugar till smooth.

2.

Add the berries,stir well

3. and spoon the mixture into the cups, filling them 2/3rds full. I wanted small ones for some kids so filled only half of them. Bake them till a skewer inserted in the center comes out clean. This takes approx 20-30 min depending on your oven.
4.

Let the muffins cool in the cups and then place them on a wire rack to cool further. You can later lightly warm them when serving.

Lovely and moist and didnt taste 'different' at all. I used soy milk, frozen blueberries and added 1/4 cup of dairy free choc drops. Also put them in the smallest patty pans and baked for 15 mins. I expect that they will be a hit at my daughters birthday party!

Another great addition to blueberry muffins is the zest of a lemon, about a tsp to start (adding more in the future if you desire a more lemony taste). I also add cinnamon to my blueberry muffins.

Hi Dk is there a special reason you have for not lining the muffin pans and pouring the batter directly into the pan?

My grandsons birthday is on Sunday, his request is bluberry muffins, instead of cake..my husband is allergic to eggs and I have tried other substutions that didn't taste very good, so I am anxious to try these today. Can the recipe be doubled?

Blueberries are one of my very favorite treats. I like the addition of cinnamon in this beautiful recipes. I also like that you can include the egg or skip it without altering the recipe.
