My little dude has started liking Pizza of late (no surprises there!). I am not sure if its the - novelty of ordering a home delivery or  a hassle free "eating-right-out-of-box" informal dining style or  the fact that I spend more time with him instead of ignoring him while cooking or that cheesy, gooey goodness or a mix of all factors  - that he finds appealing.

Nevertheless, the fact that he likes it is good enough for me. Hence that lead to incorporating those flavors in other "fun foods". Here I have to mention, that this found f(l)avor even with my husband (200% more) than my little dude. I can pretty much sum this up as Dude's Muffins :) Its like bite sized pizza and for some reason that's seems like an awesome gift to guyz!

These are addictive with every bite having a profound basil and cheesy flavor. Not too cheesy though - just right. To us, black olives resonate with pizza and hence have added to this as well. Adding fresh Mozzarella is really a game changer if you ask me. Since these keep well in fridge (and freezer), they make for a welcome snack.  Serve it with whatever you would serve with a pizza. They are perfect as they are, but some chilli sauce, ketchup -why? even some pizza sauce, would work well.

  • Yields: Makes 12 Pizza Muffins
Ingredients
  • 2 cups All Purpose Flour or see Tips
  • 2 tbsp Sugar, or see Tips
  • 1 tbsp Baking Powder
  • 1 tsp Dried Basil
  • 1 tsp Sea Salt
  • 1/2 tsp Baking Soda
  • 1 cup (4 oz) Sharp Raw Cheddar, or see Tips
  • 3/4 cup 0% Greek Yogurt, or see Tips
  • 1/4 cup Milk, or see Tips
  • 4 Egg Whites, see Tips
  • 1/4 cup Butter, melted
  • 1/2 cup finely chopped Pizza Vegetables, see Tips
  • 1/4 cup Pizza Sauce
  • 1/2 cup shredded Fresh Mozzarella, see Tips
Tips
1. All Purpose Flour: You can use Whole Wheat Pastry Flour instead. You can also try using Whole Wheat: All Purpose Flour 50:50.

2. Sugar: The original recipe calls for 1/4 cups of sugar. I am into adding sugar 'cos of our taste preference hence use only 2 tbsp.

3. Cheddar Cheese: I buy Vegetarian Cheese. But you can use regular yellow sharp cheddar instead.

4. Greek Yogurt: You can use regular whole milk yogurt. If you do, use 1 cup instead and skip the 1/4 cup milk. I add it to dilute the thick greek yogurt. You can also use full fat Greek yogurt as well.

5. Milk: I use Raw Milk, but you can use any kind you prefer. You can add water instead. I only use it to dilute the thick Greek Yogurt. If you are not using Greek Yogurt you can skip adding milk and use 1 cup Regular Yogurt instead of 3/4 cups.

6. Eggs: Or use 2 Whole Eggs. If you want another alternative to eggs, check out my Egg Substitutions Chartfor a possible substitute.

7. Pizza Vegetables: You can use any vegetables you like in your Pizza. I have used - red belle pepper, Green bell pepper, scallion and black olives.

8. Mozzarella: I use Vegetarian Mozzarella and prefer fresh. But you can use regular shredded Mozzarella cheese of your choice. Also refer: Is Cheese Vegetarian?
Method
1. Preheat oven to 400 F (200 C). In a large bowl, add together flour, sugar, baking powder, salt, basil and baking soda
2. and mix until combined. Stir in cheddar cubes.
3. In another bowl, whisk together yogurt, eggs and butter until smooth.
4. Stir into flour mixture
5. just until well combined. Don't be too rough,
6. but make sure to check there are no dry spots visible.
7. Stir in the veggies. See Tip 7 .
8. The batter will be very thick.
9. Spoon batter into muffin cups, dividing evenly.  Make sure to grease the cups well to avoid the pizza muffins from sticking to it.
10. Spoon 1 tsp pizza sauce on top of each muffin
11. Sprinkle each with shredded mozzarella.
12. Bake about 20 minutes
13. or until golden and a toothpick inserted in center of one of middle muffins comes out clean. Let muffins cool in pan at least 5 minutes before removing,

Hi DK

I made this recipe with red yellow b green bell peppers n used 50:50 flour n maids. It came out so soft n fluffy. Simple to make with easily available ingredients. Keep sharing such awesome recipes!! ;) 

BTW its THE first chef in you recipe I tried n now a fan!!

Keep. g the original recipe as it is.  In variation I added. ......  

Vegetables -peace of  chopped sundried tomatoes& 1small mushroom. Spice added in vegetables. -pinch of oregano, chilli flakes, crushed black paper&garlick salt..

Instead of 4white eggs I used 2 whole eggs..

Once muffins was ready I spread olive oil on each muffins.

I havent personally tried any - but try flax seed for one egg and tofu for another in combo. I say this cos I am not sure if too much flaxseed can overpower the taste. Or any store bought replacement like NeatEgg (made using chia seeds + garbanzo flour) or even Instant mashed potatoes mix (2 tbsp for each egg). You will possibly have to try few variations before hitting the right one for you.--DK

I tried this recipe and they tasted really good but they didn't turn out very fluffy. I skipped the eggs but added some more milk instead. Please can you advise what I can do to replace the eggs and make these muffins fluffy. I have my son's birthday party coming up and really want to make these :-)

Oh that is so unique. why did i not think about this kind of recipe.. i think it is one of its kinds recipe. it is confusing me.. my mind says it is a muffin (sweet and fruity) and it is savory.. it is deadly combo. thanks for sharing awesome idea. I followed the recipe but skipped on eggs though...but I was wondering if the base is supposed to be little hard like pizza? As mine came out soft like muffins

One small tip: if you are skipping an ingredient, you have to make a suitable replacement otherwise the end result would be very different from the intended one. As for the texture, it is supposed to be muffin like - bready and spongy not tough--DK
