I am back! I am back! Now Waittaminute! Was I really gone? Well if you count my blog post presence then I was not, but if you talk about physical presence, then were you aware that I did a total bunk last 4 days ?
. Was out on a business trip and returned late yesterday night and here I am back today with a post!
Oh Boy! Do I love this new scheduler in blogger or what! A blessing right at the time of dire need.
Anyways, including lots of veggies in one dish is my forte! And thats obvious thanks to vegetarian’ism. Usually while working, I dont like to have a heavy lunch in the noons since it only means I am going to go into my virtual dream world with my eyes-open-but-refusing-to-focus mode. So salads or v light lunches are my way of solving that issue. When I saw Siri’s Couscous Salad, I immedietely recalled one Moroccan Tagine that I had come across somewhere. So using that I made Couscous with the Tagine – Moroccan style.
Method
1.Heat the Oven to 350F. In a large saucepan/Oven proof dish, heat some oil and saute the onions. Add all the spices and saute some more.
2.Add the vegetables and cook for 10min or until the veggies’ slowly start to soften up. Add the tomatoes, lemon and prunes and little water ( about 1/3 -1/2 cup ), stir and place in the oven.
3.Bake for 15-30min till its cooked and then garnish with cilantro.
4.Cover the couscous in a cup of boiling water and Olive oil and leave till all the water has been absorbed. Fluff with a fork.
5.Now spread the coucous in a plate and spoon the tagine in the middle. Sprinkle with almonds/cashews and now thats as hearty as it can get.
All the nutrition from the vegetables,prunes and nuts and less oil to boot. I thought of sending this to Raaga for the MBP event, but then I couldnt owing to my absence
and only today realised that I was way past the deadline.
One glance at the blog-o-sphere, I found that I am way behind in updating my bookmark list with all your recipes and I also think I glanced at some mouth watering entries for the Open-Sesame Contest. My joy knows no bounds when I got to know that you all enjoyed cracking the riddles as much as I had of making them…..Will leave my word print in your blogs the minute I settle down from my travel stupor
