Plum Crumble Cake
After ALL . THAT . TALK about Plums and traveling down the memory lane sure would have given you a hint about whats coming up next - see I am such a good soul giving you a fair warning before. aint I? "Warning? Why Warning?" - You ask me? HAHAHA! (devilish laughter) For a reason dudettes (and um..dudes!?)
Plum Crumble Cake
You have been good the whole week, eating right, taking well balanced and low fat meals into consideration! Yes?Thought so! So I thought why not spoil it..(cough)..err..(splutter)..no I mean award you for being so good! You should treat yourselves once in a while for being good. In this age and time being a goody two shoes is horrible - That's sin ppl! Talking of sin, here is one totally sinful dessert for you to enjoy - this type melts and tingles in your tongue and you wont even mind being evil! This is exactly how I looked like when I was busy making this cake!! ;) Ok at least that's how I felt ! I have been meaning to make this cake for ages now. Its more about the crumble than the cake by itself. So if you are a crumble lover - then this is totally for you.Was pushing this off until yesterday when I finally gave in. Its rich and its yummy! Enjoy this with your own discretion - trust me, I have given you enough warning and not without any reason. It MELTS ladies! Melts...The original recipe has 4 eggs, I cut them out - oh shucks! Not for cutting out cholesterol which is what I keep harping about in all my posts- but cos I ran out of eggs!  But if a cake without the eggy beauties could taste this way - then GO EGG LESS! :) OK now to the recipe

  • Yields: Makes one 9 inch cake
Ingredients
  • For the Cake
  • 1/2 cup butter, at room temperature
  • 1/4 cup sugar
  • 1/2 cup plum sauce (cook until soft and blend in juicer, sift)
  • 1/2 cup vegetable oil
  • (Or you can skip the above two points and use 4 eggs at room temperature instead)
  • 1-1/2 tsp vanilla extract
  • 1-1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1-1/2 pounds red plums (I used about 6 plums)
  • For the topping
  • 1 cup all purpose flour
  • 3/4 cup light brown sugar
  • 1-1/2 tsp ground cinnamon
  • 6 tbsp butter,cut into pieces
Method
1. Preheat Oven to 350F. For the topping, combine the ingredients until they resemble bread crumbs
2. Now take the plums, halve it and take out the pit.
3. Cream the butter and sugar until fluffy
4. You can add the eggs one by one (if using) or else add the plum sauce and vegetable oil along with vanilla and beat it well
5. Slowly in 2-3 batches, sift, then fold in the flour and baking powder together to this mixture.
6. Pour the mixture in a Cake pan (10X2 preferable- greased and topped with a wax paper. Grease the wax paper too.) and arrange the plums on top.
7. Sprinkle the topping.
8. Bake in the oven for approx 45 min until a skewer inserted in the center comes out clean.
Cool and serve! If you can handle it - serve it with icecream!

Ooh! I love crumble cakes, especially the gooey-crumbly ones like this:) I have some plums ready to be picked and I know what I'll do with them!:) wish you had some nuts added to the topping then I could've stolen it for my SHF-Fruit & Nut event!!:) Ohhh ...I am getting notoriously bad at not keeping up with events - lemme check the deadline and see if I can whip up something for the event :)

Never ever thght of using a cake base for the crumble.You can have the cake and eat it(the crumble) too.Lovely and delicious.Your pics make everything look simple and are very useful.Plum puree/sauce will sure work as an eggreplacer.Delightful. The onida monster is surely doing a great job mixing the batter for you.Surely you r blogger's envy and bakers(foodies) pride Ok that did it for me! I thought I can never defy gravity - but guess I can too - lemme enjoy the skies! rest later when I get back to earth!
