"Almond cake",This mithai used to be my grand dad's favorite delicacy & I learnt it from him!!

  • Yields: 12- 15 mithais
Ingredients
  • Badam/Almonds 200gms/one & half cup
  • Sugar-powdered 1 cup
  • Saffron few
  • Vanilla essence few drops
  • Water Half cup
  • Food color(orange) 2 drops
  • Badam pieces For topping
  • Milk 2 tsps
Method
1.

Soak the almonds/Badam in hot water for 2 hrs.Now strain the water twice & remove the outer skin. Grind into a smooth paste, adding little milk,keep it aside.

Now take a deep heavy bottomed vessel,Add the required sugar,water & make sugar syrup with low or medium heat,till u get two string consistency.

Slowly add the badam paste in the sugar syrup.Blend the mixture well so that no lumps are formed.

4.

Also add a tinge of orange food color, few saffron strings & few drops of vanilla essence.Keep stirring the mixture well, till it becomes thick & leaves the sides of the vessel/kadai.

5.

Finally pour this mixture in a greased plate with ghee & allow it to set and cool.After 20 mts, cut into square/diamond shape & top them with badam pieces.

6.

Your almond cake or badam burfi is now ready.

I love this recipe! I'm going to try it and will post my results! It looks fairly easy, thank goodness! I have multiple things i'll be baking, making, so the easier the recipe, the more I can make.

Is there no ghee on this recipe? How does it leave the sides of the pan without ghee?
