Phirni is a ’kheer’ like pudding made with milk, rice and sugar. This pudding is very versatile, you can use any flavor to add in of your choice.I tried it with coconut milk instead of regular milk......:)
In a heavy bottom pan, heat the thin coconut milk and bring it to a gentle boil.Add sugar and slowly incorporate the rice paste, continuously whisking the mixture to avoid any lumps.
Reduce the heat to medium-low and continue to whisk until the mixture becomes thick.Add crushed cardamom and thick coconut milk, mix well to combine.
Add crushed cashew nuts and saffron milk, mix well.Without cooling transfer to earthen pots and sprinkle garnish.
Keep refrigerated for 3 hours or till chilled and set properly.Serve chilled.....:)
i thought that some of ma foodie friends may be vegan or lactose intolerant, and they also wish to savor some sweets,on some occasions,it is specially for them:)
