Phirni is a ’kheer’ like pudding made with milk, rice and sugar. This pudding is very versatile,you can use any flavor to add in of your choice.I tried it with coconut milk instead of regular milk......:)

Ingredients
  • * 4 cups coconut milk (2nd extract)
  • * 1/2 cup coconut milk (thick)
  • * 3/4 cup sugar / sugar free
  • * 2 tbsp rice powder + 1/2 cup chilled water mix paste
  • * 1/2cup cashew nuts crushed
  • * 2 tablespoon saffron milk
  • * 1/2 tsp green cardamom powder
  • For garnish
  • * A few flakes of almond n pistachio
  • * silver verk
  • Earthen Pots For serving (soak in tap water for about 2 hours)
Method
1.

In a heavy bottom pan, heat the thin coconut milk and bring it to a gentle boil.Add sugar and slowly incorporate the rice paste, continuously whisking the mixture to avoid any lumps.

Reduce the heat to medium-low and continue to whisk until the mixture becomes thick.Add crushed cardamom and thick coconut milk,mix well to combine.

3.

Add crushed cashew nuts and saffron milk,mix well.Without cooling transfer to earthen pots and sprinkle garnish.

4.

Keep refrigerated for 3 hours or till chilled and set properly.Serve chilled.....:)
