In India,we make different kinds of sweets from different nuts and fruits.This Kaju Katli is a simple yet tricky recipe,requires lots of practice,I failed so many times, after 3rd attempt my katli"s are some what edible.But this time (my 10th attempt:D)I made it for Krishna Janmasthami Pooja.......turns really nice......tempted to share with u all:)

Ingredients
  • 1/4 kg cashew nut powder
  • 1/2 cup Sugar
  • 1/4 cup water
  • 1 teaspoon milk
  • 1 tablespoon ghee (melted)
  • For Garnish:
  • Silver verk
  • Butter paper as needed
Method
1.

In a pan add sugar and water and bring it to boil. Add milk and ,bring to boil.Remove impurities from syrup and cook till it forms a syrup of three thread consistency.(check by your finger tips,this one is little bit tricky part,at least for me,just check it properly.

Add ghee (it will give luster) to this syrup. Add cashew nut powder and mix thoroughly,cool slightly and Knead it well,like dough.

On a clean surface keep butter paper and roll the dough on it ,into half centimeter thickness. Spread silver varq over it and cut into diamond shape.

4.

Set for a while and store in any flat air tight box,don"t overlape,arrange nicely in row.Keep butter paper in between two rows.

5.

Can be stored on self for 15 day"s.If you wish avoid the verk.Saffron can be added to it,for color and flavor.

Almond / pistachios /groundnut katli can be made by same process....:)
