This is a great recipe that is a hit with kids, and adults. Quick and easy to make, especially if you are short of time. Serve this with garlic bread and a lovely green salad, it is a nutritious and filling meal that must be tried!

  • Serves: 3 people
Ingredients
  • 2 Eggs
  • 1/2 Cup Sweetcorn
  • 1/2 Cup Mixed Vegetables (Frozen, or Fresh, chopped small. I personally prefer just green pepper, brocolli, and mushrooms... but the choice is yours)
  • 1 Chopped Onion
  • 1 Cup Natural Yoghurt
  • 1 Cup Plain Flour
  • 1/2 Cup Vegetable Oil
  • 1 Teaspoon Garlic (To taste, or you can miss it out)
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 1/2 Cup Grated Cheese
  • A Pinch of Dry Herbs (Optional)
  • Red Chilli Flakes (Optional
  • Crushed Black Pepper (Optional)
Method
1.

Beat the Eggs and Yoghurt together, till it is beaten into a thick consistency

2.

Slowly add in the oil and plain flour, and continue beating the mixture.

3.

Add all the rest of the ingredients EXCEPT the cheese, and mix well

4.

Pour the mixure into a greased baking, or casserole dish.

5.

Sprinkle the cheese on top, as well as the optional herba and chilli flakes. Bake this at 180°C for 40 minutes.
