New York Style Bagels
Having drafts is such a boon! I don't seem to enjoy having them often! So imagine my surprise when I found that I actually had one unnoticed :) I made Bagels a long while back and this type of Bagel is called New York Style Bagel. We love bagels and I have made quite a lot of them with variations galore.There are basically two types of bagels : The New York style Bagels are very puffy, fat and rounded. They contain salt and malt and is boiled in water before baking in a oven. Because of this the Bagels puff up and also form crusty surface. The Montreal bagels are smaller and chewier - where they are boiled first in honey sweetened water before finally baking them in wood-fired ovens. They usually are accompanied with a heavy topping of seasame seeds and black poppy seeds. It contains malt, egg and is salt less. I like the seed toppings and thus have used them for these bagels here which is a Food Network Chef - Emeril Lagasse's recipe. I reduced his recipe to make 6 bagles and also changed his method to suit my preference and make it easier on me. I used topping for two of them and kept the rest plain.

  • Yields: Makes 6 Bagels
Ingredients
  • 1 cup lukewarm water
  • 1 pckt active dry yeast (approx 2-1/2 teaspoons)
  • 1-1/2 tbsp sugar
  • 2-1/2 to 3 cups all purpose flour
  • 1 tsp salt
  • 1 tsp vegetable oil
  • Toppings (optional)
  • 1 tbsp sesame seeds
  • 1 tbsp poppy seeds
  • few spoons of toasted onions
Method
1. Combine the water, yeast, and sugar in the bowl. Let it stand until foamy, about 5 minutes.
2. Gradually add the flour, few cups at a time and the salt, and mix until the mixture comes together with a wooden spoon ( hands preferable).
3. It should be a stiff dough. Turn out onto a lightly floured surface and knead until smooth and no longer sticky, about 5 minutes, adding just as much flour as needed.
4. Place the dough in a greased bowl, turning to coat with little oil.
5. Cover and let rise until almost doubled, approx 1 hour.
6. Remove from the bowl and punch down the dough. Divide into 6 equal pieces. Roll into a circle, using your finger poke a hole in the middle. Place on a lightly greased surface, covered with a clean cloth, and let rest until risen a tad about 20 to 30 minutes.
7. Bring a large skillet of water to a boil. Add about 1 tbsp of sugar to the water. Drop the bagels into them for about 45 second to a minute, turning them in the middle.
8. Remove and lay them on a greased baking sheet.
9. Use any topping you like at this time, if at all, cos it will stick on the wet surface.
10. Bake for about 5-10 minutes in a preheated 400F oven until golden/crusty on the surface.. Updated This baking time varies from oven to oven. While it used to take 15-20min in my previous Oven, it takes only about 5-10 minutes in my current oven after which it dries out and becomes hard. I think the trick to know the correct time would be when the surface of your bagels gets slightly golden. It gets crusty even after taking it out of the oven and during the cooling process. This will be a trial and error for every oven.
11. Remove from the oven and let cool on a wire rack.

Hi,

Everyone in my family is really fond of Bagels and so i tried them but i think I failed on the first step itself, I should have done the yeast step again but I thought maybe it was because of the difference in brand and stuff. I used 1-1/2 powdered sugar, 2-1/2 active yeast and 1 cup water but it didn't get this foamy. I guess what I am asking is was it because the sugar was powered or was it because the yeast was less.....or ofcourse could it be because the water wasn't warm enough. I am not sure, but that one prolem led to another and the dough didn't rise, they didn't boil well and ultimately were all raw inside when taken out from the oven...even though the top layer did give me some hope :( please help!

A little tip on getting toppings to stick is to brush a little egg white on before adding toppings. :-D

If you haven't already, try toasting the sesame seeds (dry pan, medium flame - until lightly browned). This increases the flavor by at minimum 1000% and they will not be burned up by baking. Sprinkle as normal as the topping.

Can these be made into garlic bagels? My husband loves them but we cannot find them in our area.

Oh absolutely Ruthey! Once these bagels are done, slice them into half lengthwise into round disks. Spray with PAM or little melted butter - sprinkle garlic powder. Do the same on the other side and broil them until crisp. Cool them a bit and enjoy! I love these.....--DK

Sadly ..mine turned out really tasteless! i cant do anything but throw them all out..:( Maybe i shud've first tried with all purpose flour.. BUt the pics look really good DK...n process is really simple! Maybe next time i 'll get them rite!

Thats indeed sad....but can you identify where exactly you went wrong? See the process steps - This is made with APF - did u remember to add salt? did it rise well? did you remember to rise it twice? Was it boiled properly and not too long? Check which step was different (from the process pictures), so that next time you can make sure it does not happen - these take effort and no one likes to see the effort going waste...I surely wish that it works out well for you next time....which am sure it will!--DK

@Stepjchows : It takes me approx 5-10 minutes for the slightly golden crust...After removing the color deepens. The time is depending on the size it has puffed up during the rest of the process me thinks. The timing varies from oven to oven and the surrounding temp. I have updated the post to accomodate the timings.

@plowlady : You are absolutely right in thinking that way! Justified since I love love them. Yes - I understand exactly what U ask me since I prefer them the same way. Make sure while baking though - too much baking makes it v crunchy with the insides becoming hard slightly...too less in the oven - makes them soft overall. This correct timings varies from oven to oven. In my previous oven that used to take 10-15 minutes while in this current one, it takes only 5. I think when the top gets lightly golden, remove them immedietly. Cooling it makes the surface crustier and the inside remains soft and bready :) Hope I answered ur question.:)

ok, before trying this recipe, I HAVE to ask you something..being a NY'r, there are NO other bagels like ours, seriously! Does this recipe make them crunchy crust (should make a snap or crunch sound when you bite into it) and have a tender inside, chewy...not 'thick' feeling at all...hard to explain, but it's VERY important they do this...do you understand what I'm asking?
