Quinoa Dinner Rolls Recipe

My love for quinoa is not unknown especially for regular readers of this blog. I try out various recipes and am always on the lookout for more and more. During one such search I came across this recipe . The pull of the recipe was so much that, I found myself making these dinner rolls the very same day.The taste is amazing to say the least.I have just make very few changes to this recipe to increase the nutritional value and reduce bad fats.

  • Yields: Makes 16 rolls
Ingredients
  • 1 cup quinoa
  • 2 cups water
  • 3 teaspoons salt
  • 1 1/2 tablespoons active dried yeast
  • 1 cup warm water
  • 1/2 cup honey plus 1 tablespoon
  • 1 cup vegetable oil
  • 2 eggs whites (or you can skip and add more oil/cooked quinoa water instead)
  • 2 cups whole wheat flour
  • 4 cups bread flour
Method
1. Place the quinoa in a pot with one teaspoon of salt and one tablespoon honey, and cover with the 2 cups of water.
2. Bring to a simmer and cook for 15 minutes, until quinoa has absorbed all of the water. Let cool. Set aside 1/4 cup cooked quinoa for sprinkling on top of shaped rolls.
3. In a large bowl, dissolve the yeast in one cup of warm water. Add the honey, eggs, and oil. Add the 2 cups of whole wheat flour and mix well.
4. Add 2 teaspoons salt and 2 cups of the bread flour and mix well.
5. Add quinoa and 1 more cup of flour and knead dough, adding last cup of flour as needed.
6. Knead dough until dough is smooth and fairly stiff.Place dough in oiled bowl and allow to rise in a warm place until doubled in bulk, about 2 hours.
7. Preheat oven to 425 degrees.Punch down dough and divide into 16 equal pieces. Roll each piece into a ball, stretching the top of the roll smooth and pulling the excess dough to the underside of the roll.
8. Place rolls, seam side down, on a baking sheet. Brush tops of rolls with melted butter, and sprinkle with reserved cooked quinoa, and coarse salt. Bake rolls for 10 minutes, then lower temperature to 375, and continue to bake for 15 minutes more. Rolls are ready when they are dark golden brown.
9. Serve warm. These keep well wrapped in foil for 2 days easily. I am not sure after that since it dint last more than that for the two of us. They went well as burger buns and also as great side for soups. Give it a try..you will love them too :)

I rarely take the time to comment but absolutely love these buns. My husband said best whole grain bun he has ever tasted. I am always looking for healthy options for myself and my family, so thank you so much.

I did reduce the honey by 1/2 cup just because I am more of a savory than sweet type. I kept the dough very sticky (did not use the last cup of flour) and also gave it some resting time so they would not get too heavy. I greased my hands to be able to keep dough sticky and still be able to form the buns.

I made these dinner rolls tonight and it was divine. This is one of the best yeast based buns that I've made so far. We all loved it. It looked a little intimidating when I looking at the procedure but when I made it was pretty easy :).  Its definitely something that I'll keep making pretty often. Thanks for this wonderful recipe!!

I tried wholewheat recipe and it came out very hard and i cud not even cut it into slices......tried it 2 times it was the same case... im afraid to try more

It could be cos its not rising properly. Check if your yeast is alive and kicking. --DK

Hi DK, I made one modification to this recipe. I added half olive oil and half canola oil. The aroma of the olive oil in the buns is enticing. I forgot to mention this earlier. Thank u once again for this lovely recipe.

My farmer's market stockes quinoa flour. Do you know if I can substitute it for either of the other two flours?

I am really not sure how it will work. It will taste delicious am sure, but the heartiness factor which the cooked grains impart might be lost! I am sorry - am totally at a loss to advise you in this! but I wud surely love to experiment with the flour in this recipe :) --DK
