Fried paneer cubes cooked in rich cashew & tomatoe gravy.
Deep fry fresh paneer cubes, in cooking oil, till golden brown & put them in cold water for 5 mts. Strain and keep aside.
Roast all spices, also fry chopped onions & coconut till golden brown.Leave them to cool.
Grind the fried onions,coconut,spices,fried channa dhal,ginger,green chillies,few cashews,turmeric powder,salt,chopped tomatoes,garam masala powder,jeera,coriander seeds.Grind into a smooth paste.
Take a deep fried pan, add little cooking oil and fry the masala gravy for 20 mts in medium or low heat. Add few brinji/bay leaves and stir well.
Keep on stirring for another ten mts,then add the fried panner cubes.If the gravy is very thick, add half cup water. For more flavour, a tinge of sugar can be added. Finally add ghee, cook till done for another few mts.
Top the paneer cashew gravy with few fried cashewnuts & chopped coriander leaves
Your lipsmacking Dish is ready to serve along with rotis/Parathas/Pulao.
