Frankie is a very popular street side food found in Mumbai.Its also called as Kati Roll in other parts of India.Mostly filled in with spicy potato filling with a topping of raw onions and generously grated cheese,the rotis or flat bread cooked with yummy butter,is wrapped into a roll similar to burrito and served hot with tomato sauce.The description itself is making my taste buds to drool :-)
After searching a lot,came across this wonderful recipe in one of Tarla Dalal's cook book..Tried it came out well,sharing it with you guys who would love to try this.Please do try and lemme know how you guys feel about this.

  • Yields: 6-7 frankies
Ingredients
  • ---------------------------
  • For the Paratha / Roti
  • ---------------------------
  • 1 cup Maida / APF
  • 1/2 cup wheat flour
  • pinch of salt.
  • ---------------------
  • For the filling
  • ---------------------
  • 3-4 boiled potatoes mashed
  • 1 medium sized onion finely chopped
  • 1 tsp red chilli powder
  • 1 tsp chat masala
  • 1 tsp garam masala
  • ginger garlic paste
  • 2 tbsp oil / butter
  • fresh corriander chopped
  • salt to taste
  • -----------------------
  • For the Garnishing
  • -----------------------
  • 1 medium sized onion chopped
  • chopped corriander
  • 1 tsp chat masala
  • pinch of salt
  • 1 cup Grated cheese
Method
1.

For the Rotis /Parathas

Knead a smooth soft dough using the ingredients under the For the Paratha section and keep aside for half an hour in a closed container.

Pinch out lemon sized balls and roll them into rotis.

Cook the rotis using oil like how you would cook the normal chapatis /parathas.

Note: You can also use the normal wheat rotis if you are concerned about using maida/APF

For the Filling

In a kadai /wok,heat the oil / butter and saute the onion and ginger garlic paste.

Add in the potatoes,garam masala,red chilli powder,chat masala and mix well and saute for about 2 mins.Adjust spice levels as per your taste.

Add the corriander and mix well and keep aside.

How to make the Frankie/Kati Roll

Place the rotis on a clean dry surface.

Spread the potato filling in the center of the roti in a single row.

Sprinkle some chat powder all over the filling (optional)

Spread a little of the onion mixture and cheese on top.

Wrap and roll it tightly and serve immediately with tomato sauce .

Repeat the same steps for the other rotis as well.
