I always like the fresh aroma of mango pickle so end up making apple pickle to substitute that and it was hit. My mother used to make this grated mango pickle(pachadi..) and she used to call it Gujjuri mindi(I guess) and I followed that recipe and substituted with Green sour apple and it came out really good.

Ingredients
  • 4 cups grated Apple - Granny smith apple
  • 1/4 cup Salt
  • 1/4 to 1/2 cup chili powder adjusted according to taste
  • 1 teaspoon of jaggery - if apples are extremely sour
  • Turmeric powder
  • 1/2 spoon Mustard seeds
  • 1 teaspoon Menthulu (Fenugreek seeds)
  • 3/4 cup oil
  • 2-3 dry red chillies
  • Hing - pinch
Method
1.

First grate the apple for this use grater with big holes.

Take a oil in the pan and when oil gets hot enough add Mustard, fenugreek, Hing and Dry chillies. When mustard seeds start to sizzle add grated apple and saute it on medium - low flame for 10 minutes or until it becomes soft. continuously stir the apple and add jaggery to the grate if the apple is extremely sour.

When apple is cooked add salt, Chili powder and turmeric and mix. Store apple pickle in air tight container and should stay good until 1 month if it is refrigerated.

This apple pickle will taste good with rice, chapathi or any indian tiffins.
