Charchari is a,Bengali Dish, where,the spice used for tempering,are different. It is Panch Phoran: Black cumin,fenugreek seeds,Mustard Seeds,onion seeds and fennel seeds.Due to it"s tempering it taste devine,u can make charchari by using mix veg.or any one ,like brinjal,cauli flower,parval...:)
Heat oil in a kadai ,add panchphoron.When it starts spluttering, add sugar and all vegetables except cauliflower. Cook on high for 5 minutes.Stir in between.
Add cauliflower, turmeric powder, cumin powder,green chillis and salt.Cover and reduce the flame to medium. Cook for about 10-12 minutes.Stir in between.
Sprinkle little water in between if needed.When the vegetables are cooked, add garam masala and put off the heat and keep covered on the gas for 5 minutes.
Serve hot with plain rice or chapatti or any bread of your choice......:)
