This cheesecake is ready to serve within 30mins. It avoids complicated procedures like dealing with gelatine envelopes or folding in cream cheese. Adding curd to the mix adds a refreshing tartness to the cheesecake. You can easily scale the recipe or add fresh fruit puree for a change.

Ingredients
  • FOR THE CRUST:
  • 10-12 bland biscuits, like Marie
  • 2 tablespoon melted butter
  • FOR THE CHEESECAKE:
  • 1 packet plain jelly granules
  • 250 grams cottage cheese or paneer
  • FOR GARNISHING:
  • 100 ml whipped cream
  • 2 tablespoon strawberry crush
  • 4-5 tinned strawberries (u can use fresh ones too)
Method
1.

Crush the biscuits with a rolling pin. Mix the butter till the mix resembles bread crumbs.

2.

In a Springform Cake Tin, pour the mixture and make the base lightly with your palms. Freeze the base for 10mins.

3.

Heat half the water recommended on the jelly packet and dissolve the jelly granules. Blend this mix with the pureed paneer quickly as jelly will start to set.

4.

Pour this mixture onto the now frozen base. Put this into the fridge to set, which happens quickly.

5.

Decorate with whipped cream and give marble effect with strawberry crush. Garnish it with fresh or tinned strawberries.
