Healthy Coleslaw with cabbage,peppers and beans with a spicy avocado dressing

  • Yields: 3-4 cups
Ingredients
  • 1/2 cup Cooked Cranberry/Pink Beans
  • 1/2 cup thinly shredded Cabbage
  • 1 green pepper thinly sliced
  • 1/2 cup thinly sliced red pepper (optional)
  • Handful of Cilantro leaves minced/chopped
  • 1 big ripe avocado -scoop up the pulp
  • 1-2 hot fresh green chilly (as per taste)
  • 1/2 cup yoghurt
  • 1-2 tbsp minced onion/shallots
  • Salt
  • Pepper
  • Lemon Juice
Method
1.

Stone and scoop the pulp of avocado and blend it with green chilli,onion and yogurt adding little salt,pepper and lemon juice.

Mix the other ingredients -cabbage,peppers,cooked beans,cilantro -with little salt,pepper and lemon juice.

Pile the cabbage pepper mix onto a plate/salad bowl and ladle the dressing on top.
