Plum and Pecan Quick Bread
I know what you just thought -"Whats with this girl and plums!" I agree you have every right to ask this question seeing that I have been going on and on about Plums in this month. But then hey, I have valid reasons. I know that I was all excited about those plums in my backyard but I forgot one vital thing in the midst of traveling down the memory lane and the like....See the pics below to know what my problem is.
Plum and Pecan Quick Bread
Yes LOTS OF PLUMS! The only thing that is left for me to do is to pick them in a basket and open a stall at the local Farmer's market! I certainly dint bargain for this!:) Anyways not one to complain, I use them often now in my diet and hence don't be surprised if you see plums more and more in this space for a while. And hey! You have to make your friends happy and so when Mansi specifically asked for it, I had to do it and that too pronto since the deadline for SHF: Fruits and Nuts is today and the pictures are fresh from the oven! Plum and Pecan Quick Bread The original recipe has butter, eggs, refined sugar and not so much plums and nuts. I rectified all that in this recipe where there is no butter, no eggs, used less refined Demerara sugar, lots of plums and lots of pecans! You can substitute walnuts for pecans. Healthy, fruity and nutty - doesn't get better than this. Plum and Pecan Quick Bread

  • Prep time:
  • Yields: Makes one 9X5 inch loaf
  • 1/2 cup Demerara sugar
  • 1/4 cup Brown sugar
  • 1/4 cup vegetable oil
  • zest of one lemon
  • 1 cup whole wheat pastry flour (or all purpose)
  • 1/2 tsp baking soda
  • pinch of salt
  • 3/4 cup buttermilk
  • 1-1/2 cups chopped and pitted fresh plums (Note: If your plums are ripe with lots of moisture in them, then reduce it to 1 cup. Use 1-1/2 cups for firmer plums)
  • 1 tbsp Demerara sugar
  • 1/4 cup chopped pecans (or walnuts)
  • 1/4 tsp ground cinnamon
1. In a bowl, mix sugars, vegetable oil and lemon zest.
2. In another bowl combine the flour, baking soda and salt
3. Now slowly combine the flour into the sugar mixture alternating with buttermilk until smooth
4. Add the plums and stir well.
5. Pour it out into a greased loaf pan
6. Sprinkle with the topping
7. and bake in 350F oven for 1 hour or until a toothpick inserted in the center comes out clean
Cool for about 10min before removing from the pan. Plum and Pecan Quick Bread Cool completely on a wire rack, slice Plum and Pecan Quick Bread and enjoy Plum and Pecan Quick Bread

One more surprise treat to my in-laws !!!

The taste was fantastic, bit sour because of the Plum, Nutty and sweet.\"\\"cheeky\\"\" . I replaced Sour cream instead of Butter milk and ordinary sugar instead of  Demerara sugar

I love plums and your picture seemed to be just the right proportion of cake to fruit to topping so I made it last week. Now I'm in love and I've made it 3 times in 8 days! I've tried it with a variety of nuts, doubled the topping and layered it throughout the cake, added steel cut oats (my favorite) and also used cocunut in the dough, an unusual but delicious flavor combo. I love the fact that it is eggless because by changing the buttermilk to soy, peanut or wheat milk I can make it animal free to share with my vegan friend. I live in Taiwan, so next I'm going to try it with mango which I think should have a similar consistency to the plums. Thanks so much for sharing this delicious recipe!

I want to try this recipe.but my son is allergic to pecans/walnut. What other nuts can i use? almond/Cashew? or can i just skip the nuts?

Try other nuts. Most of the recipe here unless mentioned are open to your creativity and changes just the way I did to the original recipe. If you want to skip it, I dont see why it wudnt work :)

This is a great recipe. I am not a fan of wet bread, and this one is definitely wet. It didn't cook thoroughly, so the outside was crispy while the center was soggy; I couldn't cook it any longer otherwise it was going to burn. I don't know how to fix it. It tastes good though. I wouldn't mind making it again. Thanks for the recipe! Jen

Thanks Jen. Yes this is def a wet recipe. The one way that works for me to avoid the outside getting burned while the inside gets cooked is to lower the oven temperature and cook longer. Since every Oven is diff and the climate plays a role, try it by lowering the temp. It may help.

I too was thinking about the plum tree and thought maybe you have bought a house.

No - No - I think I should update the post! :) But its really a lucky deal - I never ever got to grow even in small herb/plant my entire life and I was so J of K since he had done all gardening thingy's when this place happened - the owners had everything done for us!! Its their garden - I just 'heap' their 'reward'! hehe. Its like good result without working for it madhiri- isnt that cool! ;) I always though lady luck just dint know of my address - guess she did for the first time ever!!!!

Another great fruit loaf! I just think you are blessed to have plums/fruits on your property! I live in Ontario, Canada & let me tell you... you don't see much of that stuff over here :o( . My country of origin is Argentina so I know what it was like to have them in my backyard as a kid & couldn't wait to pick them. Compote ( dessert made of whole or pieces of fruit in sugar syrup) is what my mom used to make once we got tired of eating them, no way we would let them go to waste, tee heee

It tasted just like tomato thokku. Lovely bread Dhivi. A has got bronchitis and he has given the cold to me. I'm sitting unable to lie down, stuffy nose. I think it's sivarathiri today.
