I was enchanted by most luscious looking Strawberries during my recent trip to Costco. I couldn't resist and bought the 64oz pckt. With such a abundant qty in one's hand the first thing that comes to one's mind is Jam. My last yield of Raspberry Jam was almost getting over with just few spoonfuls left - so this looked to be a good time.


Home made Jams have this advantage of controlling the level of sugar. I like it with less sugar - here I have used Brown Sugar (its little healthier than white - and little is better than nothing ;-)). There are various combo one can use to get that sweetness to the jam which I have given below. All have worked for me.

Ingredients
  • about 4 cups of strawberry , hulled
  • About 1-1/2 cup brown sugar ( You can substitute 1 cup Orange juice + 1/2 cup brown sugar ; 1 cup orange juice + 1/2 cup Splenda ; 1 cup Splenda + 1/2 sugar ; U get the idea. My strawberries were v sweet, so I used only 1 cup brown sugar)
  • 1/4 cup lemon juice
Method
1.

Slice the strawberries into quarters and place them in a large bowl.

Add the lemon juice and mash the berries well.

3.

Transfer them into a stovetop Pan or Microwave bowl and mix the sugar and stir well.

M/W for 2 min and then stir well till the sugar is dissolved. Then microwave for 30-45 min ( depending on ur m/w) and keep stirring it every 5 min.5.Do the spoon test. The Jam is done when the the juice is v thick when you dip a metal spoon in the fruit and lift to see a thick not-runny consistancy. The spoon should be cold - take a spoonful and cool. When the cold jam is of the gel like consistancy - the jam is done. If it is still runny microwave it further for 5 min before testing again.

Had been strawberry picking & got lots of strawberries. Didn't know what to make. Made milkshakes couple of times. But, the strawberries were still lying in the refrigerator. Started browsing through your website & landed on this recipe. The jam came out so yummy that I have bought another batch of strawberries to make it again. Sorry, don't have the pic. How long can it be stored for? What exactly is sterilised jar

Your jam is great and smart all in one. Strawberries are already sweet - why all the sugar? I, of course didn't think of using less sugar and made jam earlier and found it just too sweet.
