Strawberry and Yogurt Bread
Remember the Strawberry haul that I was talking about in my Strawberry Pancake post? I did few more things with those strawberries and I still have some left over which I have freezing in my refrigerator. Bread lover that I am, I naturally cant let a chance go by to make a loaf out of these berries now, would I? These turned out a.m.a.z.i.n.g. My better half is a strawberry lover while I go completely nuts over nuts. Between both of us (each picking at their favorites), the bread dint "live" to see another day!
Strawberry and Yogurt Bread
Its very simple and delicious with no hassle. The original recipe is from Taste of Home which I adapted to suit my pantry and preferences. This is perfect as a snack during tea time, a dessert with ice cream for dinner or as a elegant fruity breakfast! A Power packed nuts and fruits kind. Talk about being all purpose! Without further adieu lets go into the recipe shall we? Strawberry and Yogurt Bread
Basic Information
Prep Time: Under 30 min
Cook Time: 30 min to 1 hour
Yield: Makes one 9X5 inch loaf
Ingredients
  • 1/2 cup butter, room temperature
  • 3/4 cup demerara sugar (or plain sugar)
  • 2 eggs
  • 1/2 cup yogurt
  • 1-3/4 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp ground cinnamon
  • 1 cup fresh strawberries, chopped fine
  • 1 cup chopped walnuts
Method

Cream butter and sugar until fluffy

Beat in eggs, one at a time. Add vanilla, yogurt and mix well

Combine the dry ingredients together.

Add the dry with the wet. Fold in strawberries and half of the nuts. Mix until softened.

Pour out this mixture into a greased loaf pan. Top it off with the remaining nuts.

Bake for an hour or so in an 350F oven or until a toothpick inserted in the center comes out clean. Strawberry and Yogurt Bread Cool for 10 minutes, remove from the pan and cool it completely once again Strawberry and Yogurt Bread

    Hey, this sure looks awesome! I just finished off the last of strawberries, before I came across this. Can I substitute mangoes instead? They are staring at me from the fruit basket.

    first of all, this is a really gr8 website!!! I came across this one via FB, and was almost LOST looking at the pages :)
    This is first of the recipes I am going to try next week. One question though, the ingredients include ‘yogurt’. Now, we always use home-made dahi which is not as thick as the ready-made ‘yogurt’ we get here (in Toronto). Any tips on use of ‘dahi’ vs ‘yogurt’? should I hang the dahi for sometime before use? or is it necessary to use yogurt?
    Looking forward to trying out many more of your recipes!

    Thank you so much Apeksha :) Hanging the dahi for sometime until it thickens works. It need not be really thick – just make sure its not like buttermilk consistency. Thats more than enough. This is an yogurt bread, so adding it wud enhance the softness to the bread.Hope this helps :) –DK

    You can use wheat flour + all purpose flour half and half. Substituting with full wheat flour might make the end product a little dense and not light. Try adding 1/4 of vegetable oil additionally. It might help.–DK

  12. I am not too much into baking and my daughter loves cakes. I am calling this one a cake ( to me anything sweet is a cake ). I would love to try this irresistible combo of Strawberries and Walnuts.

    The only sweetness that could possibly come from this bread is from the berries ( which usually are little tart in nature…) esp. if you use Demarara sugar…..We are not fans of sweet, hence most of my dishes unless otherwise mentioned arent that sweet….:)

  22. cake looks yummy.. does demerera sugar alter the appearance or taste of the cake? Where do you usually use it other than baking? Tks.

    Hey Pavani, From what I have seen, I personally feel that it does not alter the taste. I use it since it is less refined than plain sugar and anything which is not refined is good for us, isnt it :) . I use Demarara for morning tea/coffee other than baking. I also use it for my lassi. Hope this helps

  24. A dollop of ice cream is perfect for this and brings out the taste of bread.Perfect bread DK.It can easily made eggless as well.
