Strawberry and Yogurt Bread
Remember the Strawberry haul that I was talking about in my Strawberry Pancake post? I did few more things with those strawberries and I still have some left over which I have freezing in my refrigerator. Bread lover that I am, I naturally cant let a chance go by to make a loaf out of these berries now, would I? These turned out a.m.a.z.i.n.g. My better half is a strawberry lover while I go completely nuts over nuts. Between both of us (each picking at their favorites), the bread dint "live" to see another day!

Triple Yum! I used greek yogurt to make this and I made a double recipe, 1/2 went into a loaf with a dusting of powdered sugar as the final topping. The other 1/2 went into muffins done with macadamia nuts in the batter instead of walnuts, and topped with a cream cheese frosting. To the loaf half of the batter I added 1/2 cup of quick oats, (so I could justify eating it for breakfast , because I'm sneaky like that). Both the loaf and the muffins were great but I really liked the addition of the pats in the loaf. I am thinking of trying a slightly thinner blue berry almond version baked in those oven donut pans, to be used as a base for serving icecream. No matter how you make it, this recipe is a keeper.

I just found this recipe today and decided to give it a try. I'm so glad I did! It was awesome! I made a few alterations, by using coconut oil instead of butter. I also used strawberry honey Greek yogurt, and reduced the sugar to 1/2 cup.

Can I use Greek yogurt?

I already answered previously --DK

Hi , dk ,, your all recipes are awesome, and it looks really tasty,, can i use vegetable oil for substitute of egg in this recipe ??

By Cheney on Dec 20, 2012

Can I use Greek yogurt with this??

Add 3/4 cup Greek yogurt and 1/4 cup water, combine and use it to make 1 cup yogurt. The addition of water us due to the thickness of greek yogurt in comparison to regular. At times, I don't do this to satisfactory results, but if you are trying for the first time, I would recommend doing the water addition. --DK

Hey, this sure looks awesome! I just finished off the last of strawberries, before I came across this. Can I substitute mangoes instead? They are staring at me from the fruit basket.

I wud say go ahead and try! One never knows with such recipes - who knows you might land on a treasure! ;) --DK

Hi DK, first of all, this is a really gr8 website!!! I came across this one via FB, and was almost LOST looking at the pages :) This is first of the recipes I am going to try next week. One question though, the ingredients include 'yogurt'. Now, we always use home-made dahi which is not as thick as the ready-made 'yogurt' we get here (in Toronto). Any tips on use of 'dahi' vs 'yogurt'? should I hang the dahi for sometime before use? or is it necessary to use yogurt? Looking forward to trying out many more of your recipes! -Apeksha

Thank you so much Apeksha :) Hanging the dahi for sometime until it thickens works. It need not be really thick - just make sure its not like buttermilk consistency. Thats more than enough. This is an yogurt bread, so adding it wud enhance the softness to the bread.Hope this helps :) --DK

Hi DK, Can i use whole wheat flour(aata) in place of APL...if yes what changes do i need to make? Vini

You can use wheat flour + all purpose flour half and half. Substituting with full wheat flour might make the end product a little dense and not light. Try adding 1/4 of vegetable oil additionally. It might help.--DK

I am not too much into baking and my daughter loves cakes. I am calling this one a cake ( to me anything sweet is a cake ). I would love to try this irresistible combo of Strawberries and Walnuts.
The only sweetness that could possibly come from this bread is from the berries ( which usually are little tart in nature...) esp. if you use Demarara sugar.....We are not fans of sweet, hence most of my dishes unless otherwise mentioned arent that sweet....:)

By Pavani on Jul 8, 2009

cake looks yummy.. does demerera sugar alter the appearance or taste of the cake? Where do you usually use it other than baking? Tks. Hey Pavani, From what I have seen, I personally feel that it does not alter the taste. I use it since it is less refined than plain sugar and anything which is not refined is good for us, isnt it :). I use Demarara for morning tea/coffee other than baking. I also use it for my lassi. Hope this helps
