You know how some wives cook meat inspite of being strict vegetarians growing up, for their non vegetarian husbands? And then there are husbands who become meat lovers for their wives sakes. And then there are couples who both become non vegetarians (hey! its just chicken...not really non veggie you know) and keep it hush hush from parents back home. Well, my story is not that fancy - err...its not even a story. But I like to exaggerate it a bit, to unreasonable heights even, just for the sakes of a "Oh-I-am-such-a-good-wife" argument. A wife who cooked EGGS for her husband when the very taste or smell would throw her into a puking frenzy (and God forbid to "ohhhh..is good news waiting to be shared" smirks). My husband humors me too ;) Bless him.

My husband has a high protein diet and being a vegetarian, the options have to be carefully evaluated, planned and executed. The requirements includes telling him exactly how much protein a particular meal has (I have a suspicion the dude has no trust on my calculation skills!), so that he can total up his day's needs effectively. Having said that, he is also finicky about too much unhealthy fat where the protein is equal (or less) than the calories that it imparts. That is a complete no-no. So everyday of just Paneer, Tofu or Cheese won't do. So are you starting to appreciate my problem now?  Anyways, coming to today's post. Its one of his breakfast that I have absolute NO IDEA of how it tastes cos I have, to date, never tasted his eggy dishes.  I rely completely on his taste buds and this he tells me is a winner. His repetitive requests for this gives me the confidence that its worthy enough to share with all you egg and protein lovers.

Ingredients
  • 1/4 cup (60ml) water
  • 2 tbsp Quinoa
  • 2 Asparagus spears, cut into 2-inch pieces
  • 1/4 cup diced white Button Mushrooms
  • 2 tbsp thinly sliced Green Onions
  • 2 Cherry tomatoes, diced or halved
  • 4 large Egg Whites, see Tips
  • 1 tbsp 2% Milk
  • 2 tsp Basil Pesto (store bought works great too)
  • 1/4 cup low fat Cottage Cheese
Tips
1. Eggs You can instead use 2 Whole Large Eggs or 2 Egg Whites and 1 Whole Egg instead.
Method
1. Combine water and quinoa in a pan
2. and bring it to a boil.
3. Reduce it to a simmer, cover and cook for about 10 minutes. Switch off the heat and leave it covered for additional 5 minutes. Then remove the lid, fluff with a fork and set aside.
4. While that's happening you can chop the vegetables and separate the egg yolks from the white.
5. In another pan, melt 1 tsp butter/oil on medium heat and saute the asparagus and mushrooms for 5 minutes.
6. Notes: If you can get the thin stemmed Asparagus, then I think personally that will work better - looks wise and cooking wise. I did not find any and hence used the regular asparagus.

Add the green onion and saute for another 3 minutes or until the asparagus is tender.
7. Remove the vegetables from the pan and transfer onto a plate along with tomatoes. Set aside.
8. Heat the same pan where you cooked the vegetables and few dots of butter, or use a cooking spray. Whisk together the egg whites, 1/4 cup cooked quinoa, milk and pesto
9. until slightly bubbly. There is no need for additional salt since the pesto and cottage cheese have enough. But if you find that its not enough for you, add in some next time around.
10. Pour this mixture to the heated pan
11. and cover with a lid (or foil).
12. Cook for about 2 minutes or until the top of the egg is firm. Place the vegetables on one side of the omelet.
13. Cover and cook for another 30 seconds so that the vegetables can be heated through.
14. At this point you can add the cottage cheese on top of the vegetable mixture and fold the omelet over the vegetables.
Serve immediately fresh from the pan.  For an an even heartier brunch add in whole wheat toast with some butter ;) Easy Breakfast Recipes | Healthy Omlet Recipes

Dietary cholesterol does not raise blood cholesterol. This contradicts a very old, outdated belief that eating the whole egg is somehow not heart healthy. Saturated fat can lead to higher cholesterol, not eating cholesterol. I include one whole egg, yolk and all, with two egg whites in my daily omelets. The yolk contains vital nutrients that the egg white does not. Plus, it adds nice flavor. It's time to dispel the old myth once and for all. Whole eggs are good for you. Eating too many of them are about avoiding excessive saturated fats, not avoiding dietary cholesterol. Prepare your omelet with non-fat cooking sprays, not fatty butter or oils. The recipe above is more heart unhealthy because of the butter, not an egg yolk.

Did you happen to read my post completely? Esp - the last para? Then you would have realized this post is NOT about cutting out egg yolks completely- rather abt minimizing it. And did you even see the amount of butter in there?! And I think you need to read more about the myths of "non-fat" cooking sprays :) --DK

Hi dk Found your website quite by chance and love your recipes and your quirky sense of humour. I live in the UK - have done for the last two decades and you and your recipes seem to fill a void in the culinary world. I love the little pop up messages I get almost every day with an interesting take on more conventional recipes. I have 3 boys and we are ( as is my hubby) all proper veggies .
