This bread is soft,moist n not so sweet.I prefer Kesar Hapus for this bread,as it gives bright yellow color, fragrance n sweetness to this bread,but you can use other quality of mangoes also.Actually yesterday,we have first monsoon in our parts of country and wanted to have something quick and healthy ,over coffee,so tried this well known bread in my style:)

Ingredients
  • 1 cup of semolina
  • 1 cup Mango pulp
  • 1/2 cup Butter (melted)
  • 1/2 cup Sugar / sugar free
  • 1/4 tsp salt
  • 1 teaspoon Baking powder
  • 1/2 teaspoon ground cardamom
  • 1 table spoon cocoa powder (dusting)
  • 1 tea spoon oil ( greasing)
Method
1.

Mix the semolina with sugar, cardamom, and baking powder.Next add melted butter and mix well.

Finally add the mango pulp and mix again. Let it sit for 10 minutes.Pre-heat the oven to 375 degrees.

Grease n dust loaf tin and pour the batter.Place in the oven and bake for 30-35 minutes. Be careful and keep a close watch after 25 minutes.

Check with a fork to see if properly baked. If the knife comes out clean then remove immediately. If it is kept for a longer time, the cake will become hard especially on the top.Allow to cool completely and then cut and serve.
