Aloo means potato a very versatile vegetable can be added to any gravy,salad,snacks.Potato tastes yum in this green gravy:)

  • Yields: serve 4 persons
Ingredients
  • 12-15 baby potato (boiled peeled and pierced with fork)
  • For Paste:
  • 1 teaspoon oil
  • 1/2 cup spring onion (roughly chopped)
  • 12 cup onion greens (roughly chopped)
  • 1/2 cup capsicum (roughly chopped)
  • 1/2 cup spinach (roughly chopped)
  • 3-4 green chillies or as per taste (roughly chopped)
  • 1 inch ginger (roughly chopped)
  • 1/2 cup curd (vegans can avoid it and use lemon juice)
  • 1 tablespoon pistachios (soaked in warm water)
  • 1 table spoon all purpose flour
  • Spices:
  • 1 teaspoon garam masala or as per taste
  • 12 teaspoon roasted cumin powder
  • 1/2 teaspoon crushed black pepper
  • 1 teaspoon sugar
  • pinch of turmeric powder
  • salt as per taste
  • For Tempering:
  • 2 tablespoon oil
  • 1 bay leaf
  • 1 teaspoon black cumin seeds ( shah jeera)
  • For Garnish:
  • cream and fresh coriander
Method
1.

In deep pan heat oil for tempering,add cumin seeds and bay leaf,saute and add the paste.

for making paste: In a pan heat oil and saute all ingredients of paste for 3-4 minutes.Cool add curd and grind it and make smooth paste(Use the water in which pistas were soaked.)

Add all spices, mix well,add potatoes sprinkle 2 tablespoon water cover and cook for 5 minutes.

Transfer to serving bowl garnish....serve hot with Shahi Lachha or any flat bread or just with steaming HOT-HOT rice.:)

actually i have little time in hand on sunday morning,so tried to add almost all green veg i have handy ,for ma brunch,but luckily it turn out very delicious.....hope ma frnds on ciy n dk will love it:)
