All those addicted to coffee will love these moist and fragrant coffee cupcakes!when you will bake this,your kitchen will going to be filled with,the heavenly aroma of coffeeeeeeeeeeeee:)

Ingredients
  • 1/2 cup butter
  • 1 cup sugar
  • 1/2 cup curd(bean curd for vegan)
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon star anise powder
  • 2 tablespoons cocoa powder
  • 3/4 cup strong cold coffee(coffee decoction for Vegan)
  • 1/2 cup raisins (soaked over night in coffee decoction)
  • 1/2 cup nuts (hazelnuts and macadamia chopped)
  • 1 teaspoon vanilla essence
Method
1.

Preheat oven to 180 degrees C. In a blender, cream together butter and sugar,add curd and vanilla.

2.

Sift together flour, baking soda,baking powder, cocoa powder,salt and powdered spices.

3.

Add alternately with coffee to make mixture wet,fold through raisins and nuts.

4.

Preheat oven to 200 degrees C.Line the molds with paper cup and arrange in a baking tray.

5.

In a blender, cream together butter and sugar.Mix in curd and vanilla.

6.

Sift together flour, baking soda, salt, baking powder, cocoa powder,spice powder.Add alternately with coffee to make mixture wet.

7.

Fold through raisins and nuts. Spoon into lined cupcake molds.Bake for 10-15 minutes.

8.

Serve hot with tea,coffee,shakes,mocktial or as it is:)
