I love pineapple.....so just to celebrate........ma B"day......made this 2 pamper ma self....though i cut 3 cakes yesterday ,but this one is made by me....remained only this much 2 click d pic:D

  • Yields: serves 4-6 person
Ingredients
  • For Cake:
  • 250 gram all purpose flour
  • 1/4 cup cornflour
  • 1oo gram butter (melted)
  • 400 gram condensed milk
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1 tsp sod-bi-carbonate
  • 1/2 teaspoon pineapple essence
  • 3/4 cup milk (chilled)
  • For the Cream Icing:
  • 500 gram double cream
  • 150 gram icing sugar
  • 1/2 teaspoon pineapple essence
  • For Pineapple glaze:
  • 100 ml fresh pineapple juice
  • 5 gram cornflour
  • 50 gram icing sugar
  • As needed:
  • 1 cup Soaking syrup or fresh pineapple juice
  • sliced tin pineapple
Method
1.

For Cream Icing:
On a big bowl of ice whisk whip cream,icing sugar and essence together,until come to stiff peak consistancy...refrigerate till use.

2.

For Pineapple Glaze:Mix all ingredients in a blender,add to pan and on the high flame,cook till transparent,stirring continuously.Keep aside.

3.

For Cake:
Preheat the oven at about 180 degrees C.Grease and line the cake tin with parchment paper.

4.

In a mixing bowl, assemble the flour, cornflour, icing sugar, baking powder and baking soda, mix with a spoon and sift to make it more airy.

5.

In separate bowl,add the condensed milk, butter, vanilla extract and milk and whisk in one direction.

6.

Add the dry ingredients,to above mixture,spoon by spoon,mix by cut and fold method.

7.

Pour the batter into the cake tin and bake for 45-50 minutes at 180 degree C,or till done.Give 5-10 minutes standing time,cool it completely.

8.

Cut the 3 layers of the cake,apply fresh pineapple juice or soaking syrup on 1st layer,place tin pineapple slice on it,apply whipped cream,repeat the procedure.

9.

Cover the cake completely with whipped cream,apply pineapple glaze on top.Garnish with glazed cherry and silver balls and sliced tin pineaple

10.

Just cut and enjoy for DK and all ma CIY Friends.....as ma B"day treat:)))))))))))))
