One thing that the dudes in my house absolutely love is a baked, crispy mac and cheese.  The last experiment of Mixed Bell Pepper Macaroni and Cheese was a huge hit. So much so that instead of lots of leftovers that I was counting on, I just had around 2 cups of it. Since I could not make a meal out of it, I thought I will do the next best thing - use it up as a snack.

To say that my little one got excited is putting it mildly; not to speak of the enthusiasm of his dad. They love their snacks and would gladly pass the tea rusk I "generously" serve them on a weekend.   Fried goodies are always welcomes (duh!) and this was a massive hit. Whoever said, the way to a Man's (and a boy's) heart is through his stomach was right.  They made me feel special and how - and all this for a fried mac and cheese! Seesh!  BOYS!

You can use your own recipe for Macaroni and Cheese to make this. Just make sure to chill it overnight (at least). I used Bell Pepper Mac and Cheese with Panko for this recipe and the combo of Panko and additional breadcrumbs made this addictive.  Since there were many nutritious elements to this snack, the cook in me was happy and satisfied as well.

  • Yields: Makes around 8-10 balls
Ingredients
  • Abt 2 cups Leftover Macaroni and Cheese, refrigerated overnight
  • 1/2 cup Whole Wheat Pastry Flour or see Tips
  • 1/2 tsp Sea Salt, or to taste
  • 1/2 tsp Pepper, freshly ground or to taste
  • 1/2 tsp Cayenne or see Tips
  • 1/3 cup Milk or see Tips
  • 1/2 cup Homemade Bread Crumbs, see Tips
Tips
1. Whole Wheat pastry Flour: Or use regular white flour (All Purpose flour/Maida)

2. Cayenne: You can use red chilli flakes or regular chilli powder. Since we don't prefer heat in our food, I use Hungarian Sweet Paprika for the color.

3. Milk: I used Raw Whole Milk in this recipe. You can use any milk you have on hand. If Eggs are OK, beat one egg with little water to use instead of milk.

4. Breadcrumbs: Since my leftover Mac and Cheese already has Panko Breadcrumbs, I use regular breadcrumbs. But you can use Panko for the extra crunch if your mac and cheese has none or regular breadcrumbs.
Method
1. Heat enough oil for deep frying. Mix the flour, salt, pepper and cayenne in a bowl.
2. Refer my tip 2 to know what I have used instead of cayenne.  Mix until combined.
3. I have used milk, but refer my tip 3 if you want another option.
4. I have used Veganic Sunflower and sesame seed bread to make my breadcrumbs. But you can use any on hand. And also please refer my tip 4, in case your Mac and Cheese recipe does not have Panko breadcrumbs in it.
5. You can use store bought breadcrumbs as well, but I prefer making right at home. Takes like 5 seconds.
6. Arrange your dredging station.
7. Take a small amount of leftover mac and cheese and press to make a ball.
8. Dredge this in the flour until coated. Pat to remove the excess flour.
9. Dip this next in your milk.
10. and then drop it on the bed of breadcrumbs.
11. Roll it until well coated.
12. Set aside on a plate while you make the rest of the balls.
13. This resting also helps the crust to set well.
14. Check for the heat of the oil. It should be around 375F.  Drop your balls into it.
15. Fry until browned all over. Correct temperature of the oil is essential to make oil free and crispy Mac and cheese balls.
16. Drop them on paper towels. There shouldn't be any oil on the paper towel if fried right.
Serve them with ketchup (for the kids) and any chilli sauce/ Sriracha for the adults. A fun and addictive snack. Fried Mac and Cheese Recipe | Fried Snacks for Kids | Appetizer and Snacks Recipes
