Indian Palak Paneer Paratha recipe (Spinach and Paneer Flatbread)
I always have Spinach and Paneer in my fridge.  They are commonly and most often used ingredients in my kitchen, especially the paneer. So I use it in various ways. Rotis / paratha is a regular at our dinner table although I have started packing it for my husband's lunch. Paratha is a great way to pack in nutrition in its stuffing with easy ways of mixing and matching ingredients in order to make some hearty lunch for us. They are easy to eat and are filling with minimal effort in the kitchen. To make the variety is immensely simple too. Like these Palak (Spinach) Paneer (Indian cottage cheese) Parathas. You have heard of the famous Indian side dish "Palak/ Saag Paneer". Its similar to that in the form of flatbread.

We all love Palak Paneer combo don't we? So, I thought why not for a paratha. Have been making this for 4 years now and its still in the wanted list :) I have used v. minimal spices for this, but since its so versatile, you can add more seasoning to the paneer stuffing or to the cover. Its your palate and your preference. You will find that this paratha will dance to your creative tunes.

  • Yields: Around 8-12 parathas depending on the size
    For the stuffing
  • 2-1/2 cups grated Paneer
  • 1-2 green chillies (as per taste)
  • 1 tsp cumin seeds/fennel seeds (optional)
  • little salt to taste (the cover has salt too - so use accordingly)
  • few springs of cilantro, chopped
Since this was made in the morning hustle bustle, I have kept the ingredients to the minimum. But you can add more spices/herbs for variety. For this recipe I replaced 1 cup wheat flour with Oat flour for the Cover.
1. I prepared the cover, the dough, the same way as mentioned in the Hara Bhara paratha post.
2. Ground the spinach with curd and mixed it to the dough. The only difference is that I added some Oat flour for more nutrition. Its not necessary but optional.
3. Add the ingredients for the stuffing together in a bowl and give it a mix.
4. Take small balls of dough. Roll it out into a small circle on a well floured surface. Make a small ball of the stuffing and place it in the center of the dough.
5. Bring up the sides towards the top and pinch it to seal the stuffing.
6. Press it down the palm and roll it out into the desired thickness. Please refer Hara Bhara Paratha post for a more detailed rolling out process.
7. Place it on a greased skillet. Cook for 1-2 minutes.
8. Turn and repeat when you see red spots on the bottom.
Nutritious Spinach with delicious Paneer stuffing is not only delicious but v filling. There is also some protein from the paneer and the curd. You can use low fat paneer if you want to cut down on some of the fat.  Serve this with pickle or Raita. Indian Palak Paneer Paratha recipe (Spinach and Paneer Flatbread)

How to make palak paratha:

Ingredients for preparing the dough

1) Wheat flower – 2-3 cups.

2) Palak leaves – ¾ of a bunch

3) Yogurt – 2 table spoons.

4) Salt- to taste.
Ingredients for preparing the stuffing

1) Cauliflower florets- 1cup- Grated

2) Paneer cubes – 5-6 nos.- Grated.

3) Green Chilly – 1-2 nos. Chopped finely

4) Coriander leaves(cilantro )- ½ cup – Chopped

5) Potato – smashed – 1 no.

6) Chat masala- 1 ½ tea spoon.

7) Salt – according to taste.


Clean and wash palak leaves thoroughly and cut it roughly. Next add it along with the yogurt to the blender and a make it a smooth paste, if required add 2 spoons of water also.

Add the palak mix in to the wheat powder and make soft dough, add more water if needed. Keep aside for 30 mints.

Add all the stuffing ingredients together and mix well and keep aside.

How to make Paratha

Take a big lemon size portion of dough and roll it in to round shape (like chapathy shape). Then put a small portion of the filling in to the middle of it.

Then bring up the sides by covering the filling (like a money bag) and pinch off the extra covering.

Again roll it carefully in to a circle shape. (Use wheat flour for dusting to avoid sticking or breaking the filling).

Heat up a tawa and put the paratha over it. Turn it and spread some ghee or oil. Cook the same until both sides are golden brown.

I made this recipe today. My first ever attempt at paratha making..Started out to make palak paratha but got sidelined into harabhara paratha :lol: Ended up with a mixture of both - but utterly delicious!!! I suppose you can do a bit of mix n match with stuffing reasonably.. Thnks for this great recipe..

Hi, I saw this recipe this evening and I HAD to make it for dinner. Fortunately I had all the ingredients on hand. I made just a couple of changes. I added ginger garlic paste to the dough and some kasuri methi to the filling. The end product was delicious and beautiful to look at. The leftover dough and filling is going to make a good lunch for my daughter tomorrow. Thanks for sharing the recipe, and your photos are also lovely. Cheers!

Hi Guys, I made this receipe and it turned out yummy. but one thing as we so used to Indian stylo food we cant stay without green chilli paste, garlic paste,ginger paste. so next time when you making it just add the three paste n serve it with green chutney or chutney and it is so yummy. trust me

Hi DK,I make something similar to this. I don't stuff the paneer,just add it along with the ingredients for dough. This way I find it easier to roll out the parathas. Your clicks are extremely delicious.The second click has me craving for these yummy parathas.Tempting spread.
