Eggless Banana Muffins

This is a great breakfast/snack to have - if you dieting, have diabetes, egg allergies / egg dislike or simply when you need to try something nutritional for a differance :) Have you ever tried Demerara Sugar? It is available in the health stores and is nutritionally superior and fewer in calories.

I use that often enough and is little milder tasting than regular refined sugar. I use that in this recipe, if not available use brown sugar instead. The qty is less enough not to affect your "low sugar" needs. Instead of using all-purpose flour for the whole muffin, I have substituted whole wheat. The sweetness for the muffins comes from the sugar,banana and applesauce

  • Yields: Makes around 12 muffins
  • 1/4 cup All Purpose flour
  • 1 cup Whole wheat flour
  • 1 tsp baking powder
  • pinch fo salt
  • 1/4 tsp each of nutmeg,cinnamon and all spice powders
  • 3-4 tbsp Demerara Sugar ( or brown sugar)
  • 1/4 cup vegetable shortening,melted
  • 1/4 cup of applesauce
  • 2/3 cup milk
  • zest of 1 Orange (try lemons instead)
  • 1 large ripe banana,pureed
  • 1/2 cup mixed chopped walnuts and rolled oats for topping

Add the sifted flours together along with salt,baking powder and spices along with the sugar.


In a seperate bowl, mix the shortening, applesauce, milk and the zest.


Gently fold the dry ingredients with the wet and then stir in the pureed banana. Stir softly until well incorporated.


In a lines muffin pan,spoon this mixture until 3/4th full and top it off with the oat-nut mixture.


Bake for 15-20min in a preheated 400F oven. The muffins are done when a skewer inserted in the middle comes out clean.

Cool them in a rack for 5-10min before serving. Serve warm.

This is for Soledad (Chile) which asked what is vegetable shortening. It is something like "grasa de chancho" pero basada de vegetales. Es una grasa blanca y suave que en varios paises Hispanos la usan para freir.

I tried this recipe, because it looks delicious... but it comes out with the center uncooked, even if I leave it an extra 10 min in the oven. I used margarine, because vegetable shortening doesn't exist here (Chile) and for all the rest I followed the recipe. My oven is in Celsius degrees, and I baked at 220. I used a toothpick to test them, and it LIED to me!!! I will not give up on this, your website has me on a baking frenzy and I will succeed!!! I'll admit that even if they turned out wrong, they were still good :)

Dear DK,Thankyou soo much for your reply.I am from Kolkata City in India.I have tried Eggless Vanilla cake 2-3 times in my Microwave but have never succeeded in it,I had taken the recipe from some Food site.The cake turns out too hard as they have asked to bake it for 40-45 mins.The problem is all the sites don't mention the exact temperature in terms of Microwave cooking,there lies the confusion.Anyways,am planning to try out your recipe soon for Eggless Vanilla cake.Shall revert back to you if I succeed.

Where can I get Demerara Sugar & Vegetable shortening ? Pls let me know what Vegetable shortening is exactly as I have never purchased it till now ?

Shortening is hydrogenated vegetable oil. In India, you would know it by the name Dalda. outside like here in the US its referred to as Shortening. I dunno where you are from but you get demerara in the US in local health stores. You can substitute it with regular sugar in case of unavailability --DK
