Roti finds its way in our Menu daily. ( No make it every other day!). They are such a simple bite of goodies to one's health and esp. during dinner, they are light yet filling as opposed to rice.


There is no dearth for the variations in making roti's and amongst many is this one which my mother used to make esp during when the season for red noses starts. You can increase/decrease the spices as per your taste and I have given what suits our family the best. This is a nice aromatic and spicy (not hot )roti as compared to plain ones and with Channa masala it tastes heavenly.

  • Yields: Makes 10-12 rotis
Ingredients
  • 2 cups wheat flour
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1/4 tsp Ajwain Seeds (carom seeds)
  • 1/4 tsp pepper powder
  • 1/4 tsp garam masala ( or curry powder )
  • salt to taste
  • few springs of cilantro leaves, chopped
  • 1/2 cup warm milk
Method
1.

Combine the flour with the spice and salt. Add the cilantro leaves and mix well

Add milk and little water to knead it into a pliable dough. It should be neither too soft ( not sticky at all) and neither to hard. The Roti consistancy.

3.

Keep it aside for 15 min and then divide the dough into small rounds.

4.

Shape into rounds ( or any shape you desire) by using a rolling dough on a floured surface.

5.

Then place the prepared roti in a heated non stick pan. Add a tsp of Masala Oil / oil and then cook it for 2-3 min.

6.

Turn when brown spots start appearing. Cook further for another 3-5 min.

I made 8 instead of the recommended 10-12 roti. I used dry cilantro leaves and had to add a little more milk to make the dough come together, but other than that I followed the directions pretty much to a tee. They tasted great served alongside some coconut daal. Quick, easy, and awesome flavor. Thanks for the recipe!

This is a real aromatic roti. Loved it. Will try it with some kasuri methi next time. I think that it will add an additional flavor to it. May be omit the coriander leaves. Thank you.

Hey Dhivi , I thought i was innovative when i made Ajwain roti last week.Its very healthy and definetly tastes yummy...My daughter likes it a lot...this time i will try the other spices that u have added.Your website is very tempting...shit man !!! this is the 3rd time i have burnt my food...my tomatoes turned carbon by the time i browsed all varities of roties...i have to quickly redo it...its 8:00 already :( :( OK...let me drop this last comment...ur gulab jamuns were AWESOME.....i hardly get good jamuns with ready made mix itself..god only knows what would happen if i start doing it from scratch like u....good going Dhivi.Hats OFF to ur amazing patience level. I have this silly doubt whenever i browse ur site...who will eat all these yaa..?? U bake such big loaf breads , cakes , i hope u r not putting on weight with ur own recipes..:) I guess u do mix and match of experiments and not try the same group variety until one is done...am i right ?? okies ..lots of brain eating here...sorry ...i should get going now...otherwise my daughter and husband will go cranky now !!
