Cranberry Oat Bars

If my blog is all about step-by-step pictures with instructions then recipes such as this cranberry oat bars will put me out of business. Why? Cos there arent enough steps to show!! This recipe is as simple as boiling water! Mix, toss, place, bake, cut and the only work you probably end up doing is eat them - which is never work for ppl like me anyways! umm..probably scrub the baking pan would be work but then what are dishwashers for anyways! One gotto use them at some time or the other. While clearing out my pantry, I saw half used dried cranberries and was wondering what to do when I remembered this recipe that I made like an year ago and liked it. I don't recall from where I took the recipe though but its tastes yum. Although I remember the quantity of margarine in the original recipe a little too much for my tastes and have reduced the amount. I am providing the original recipe along with the change I made.   • Serves: 2 people
Ingredients
  • 1-1/2 cups rolled oats
  • 2/3 cup raw sugar ( I used demerera sugar )
  • 1/2 cup dried cranberries
  • 1/2 cup polyunsaturated margarine, melted (I used 1/4 cup)
Method
1. Stir the ingredients together until well combined. Press this misture in a greased baking pan. Bake it for 20-25 at 375F oven, until golden. As soon as you remove it, score the mixture into squares or any shape you like and leave it to cool for 10-15min.

hi dk, i tried the recipe as per your simple instructions but texture seems all crumbly & not as in the photograph posted. don't know where i've gone wrong. i used brown sugar -do i need to powder this?

WOW! great recipe, and simple. i did add my own twist to it though and EVERYONE loved it what i added: 1/2cup *FROSTED WHEAT*crumbs, 1/4cup *honey bunches of oats with strawberries*, 1/4cup shaved almonds, 1/4 crushed peanuts/cashews, 2to3tsp *Hershey Coco*, about 4ounces of a fruity soda(i used *Monster*, spread evenly in a 9x13pan and sprinkled a layer of powder sugar evenly on top, then after done baking cut into pieces about 1inch(x)1inch nd spinkle a VERY light bit of powder sugar and turned oven to 200F placed them in for about 5 more minutes and then removed from plan placed them on plate to enjoy

I have this exact recipe from a book called The Best-Ever Vegetarian Cookbook (1999 Barnes & Noble Books) The Pan used in the recipe is an 11 X 17 inch tin pan, the bars are baked in a preheated 375 degree oven for 15-20 minutes. Also I find I get better results and flavor using real butter instead of margarine.

These are baking in the oven as I type this, and smell delicious. I halved the sugar (and just used brown) and used a couple tablespoons of honey in it's place that I mixed with the butter as it melted. I also added about a tsp of vanilla to the melted butter and honey mix. Smells incredibly good.

I use my dishwasher too for storage only! :D
I do run it a couple of times a year though to make sure that it stays in good condition... but yeah, I never use it for washing dishes. I like doing the dishes myself.

These bars are worth a shot but I only have frozen cranberries! Let's see what I can do with those...
