Rajma (kidney beans) Paneer Paratha Recipe
Few years back, one of my friends dropped over to my house. She happened to see 2 packets of paneer in my fridge and was like -"That's lots of paneer. Any guests coming over? ". I said - "No, its for us". She was astounded and wondered how we are not bored 'cos after all there are only v few dishes using paneer. I was shocked at her "only few dishes" observation. I could easily think of around 20 ways to use paneer thanks to its versatility! The number of recipes I have tried using paneer is brobdingnagian and I am sure there are many more! You don't have to go overboard with Paneer; a little here and there in the recipe never fails to transform it!
Rajma (kidney beans) Paneer Paratha Recipe
Like this recipe. I had some left over cooked rajma from another dish and thought I will use it to make parathas for packing lunch. A little grated paneer to the kidney beans along with spices makes this not only delicious but protein packed lunch too! The protein will make you full faster with little without weighing one down. If you have tried low fat paneer at home, then you probably will feel less guilty too! You can use canned Rajma in a cinch if you don't have time. Just make sure you rinse it out well under cold water to remove sodium and other preservatives first.

  • Yields: Makes around 10 parathas
Ingredients
  • 1 cup rajma/kidney beans cooked/canned
  • 1 cup paneer, grated
  • 1 small onion, finely chopped
  • 1/4 tsp turmeric powder
  • 1 tsp chilli powder / thinly sliced green chillies, as per taste (optional)
  • 1 tsp cumin-coriander powder
  • 1 tsp fennel seeds
  • few cilantro sprigs
  • 2 cups whole wheat flour + plus little more for dusting
  • enough water to bind the dough
  • salt to taste
Method
1. Knead the dough with little salt and water, until smooth. Make sure of adding only little salt since the filling will also contain salt. Set aside.
2. In a bowl, take the kidney beans and mash them well. Make sure there isnt much water in them.
3. Add the rest of the ingredients - paneer and spices along with little salt. Mix well until blended. The mixture should be tight and not watery, otherwise you will not able to stuff them in the paratha. If you think the mixture is runny, add a little all purpose flour/soy flour to bind it into a thick mixture.
4. Take a small piece from the dough, roll it into a ball. Flatten it lightly with your hands and using a rolling pin, roll it into a small circle.
5. Take a small ball of the filling - the filling should be less than the dough so that it is easier to wrap the dough over the filling. Place it in the center.
6. Bring all the sides up over the top of the filling and bunch it together.
7. With the palm of your hands, press it down.
8. It will flatten while covering the rajma filling.
9. Now roll it gently making sure that the filling does not come out. Make it thick or thin whatever you prefer making sure to keep the filling inside.
10. Heat a nonstick skilletĀ  med-high and place the paratha. trickle a little oil on all the sides of the paratha
11. Turn in about 1-2 minutes or when you see brown spots. You don't have to add oil again. Repeat this for all the parathas.
Serve warm. I just cut them into triangles while packing for lunch. If you are not that calorie conscious, then add a little ghee on the surface of the paratha! I served it with a little spinach raita and pickle! Rajma (kidney beans) Paneer Paratha Recipe

Yummy, this looks sooo good. I have to try making it. What brand of whole wheat flour do you use? It just looks so much finer than the whole wheat I am used to. Thank you.

I use Indian Brand - Chapathi Atta which is similar to Wheat Pastry flour. The regular wheat in the US stores is more coarse with bran and germ hence might make rough, hard roti(s)/chapathi but is more nutritious.

I cut the recipe in half and made 4 parathas. I pre-shaped all of them before cooking them, but i only wanted one, so i cooked just one and stacked the other 3 on top of each other and put them aside to cook when i was done eating. It was delicious! I dipped the pieces in yogurt mixed with chili sauce and it was awesome! So after i was done i start heating up a pan to cook them in and i go to pick one up and realize that they're all stuck together!!! Ahhhh! :-x doh! i guess i didn't put enough flour in between them. So i divided the mess into 3 even logs and fried it up. Just as good, and they stayed together rather nicely, hahaha. Thanks for the recipe! I'll be more careful next time

Hahahah I cudnt help but think of my first experience in making roti! I did the same - I was rolling them faster than they were cooking hence due to "lack of space" i placed them overlapping one another...In the end, it was all a mess since they stuck to one another :) I am glad u liked the recipe :) --DK
