Grilled Paneer and Fava bean Salad Recipe
We love paneer. To be honest, The Husband more so than me and I thought I was its loyal fan. The number of times I have made Paneer paratha(s) with some variation or the other and Paneer Cigar rolls is too many to even give a rough estimate! In fact can you image a husband and wife having arguments over food? No? Well the last week saw the husband miffed over the fact that the wife has no time for him. By that he meant, its been 3 whole months (he's even keeping count!) since I made him these rolls! Yeah right! Can you believe him? Well that's how much he loves paneer :) May be more so than me! I am scared to ask in case he confirms my suspicion!! Needless to say, Paneer is part of my refrigerator. I dont remember my fridge ever being without paneer. He might forget the whole list I sent him for groceries but he sure will buy paneer home :)
Grilled Paneer and Fava bean Salad Recipe
Changes I Made: I had some beautiful looking fava beans from the farmer's market and wanted to make a salad. I am the only taker for salads (sans the leaves, roots and shoots types) in my house. The husband will not touch it (or make weird faces) owing to the fact it is "cold" and "spoils the appetite!". I wanted to use them for a meal and I thought I will add in some paneer to the mix just to check if that would coax him to eat it. Well he did, not as much as I would like him to, but enough to make me smile and him to complain to a teeny 9 month old about how his future is full of dirty tricks from his mom! Sigh! that's my life! I used the basic recipe from the magazine with few changes here and there. The chicken was replaced by paneer. I used some walnut oil instead of olive oil to brush the paneer. I think I was tad more generous with my mint (fresh from the garden hence generous). Grilled Paneer and Fava bean Salad Recipe The flavor was fresh bursting with minty and lemony flavors. The earthy fava beans benefitted from the mint and the chewy paneer made it substantial. The grilling gave it a fried flavor but without the frying. A simple but a healthy salad to brighten up your regular salad routine.

Ingredients
  • 2 cups shelled Fava Beans (about 4 pounds unshelled)
  • 3 tbsp Extra-Virgin Olive Oil
  • 1 tbsp Walnut Oil
  • 1 tsp grated Lemon rind
  • 2 tbsp fresh Lemon juice
  • 2 tbsp chopped fresh mint
  • Salt to taste
  • freshly ground Black Pepper, to taste
  • 400 grams Paneer
  • Cooking spray
  • 6 lemon wedges (optional)
  • Fresh mint sprigs (optional)
Method
1. Steam the shelled Fava Beans for about 2 minutes or until tender.
2. Remove tough outer skins from beans; discard skins.
3. Combine 3 tablespoons oil, rind, juice, chopped mint,  salt, and pepper in a medium bowl. Add fava beans to oil mixture; toss to coat. Set aside.
4. Prepare grill to medium-high heat. I cut the Paneer into thin slices. Then I brushed it with Walnut oil on both the sides. I seasoned it a bit with salt and pepper.
5. Grease the grill pan with PAM (or any other cooking oil) ; Place the thin Paneer slices on it. Keeping the grill hot and greased, a must, to avoid the food sticking to the pan.
6. Grill 10-12 minutes or until done, turning once. You can place a weight on the top for the grill marks to be more prominent. I placed a can of condensed milk on top.
7. Chop the paneer into bite sized pieces.
8. Toss it to the fava bean bowl.
9. Give a good toss and let it sit for few minutes for the flavors to mingle.
Garnish with lemon wedges and mint sprigs, if desired. I served this with lightly spiced and warm couscous. Grilled Paneer and Fava bean Salad Recipe

I don't make many salads at home though i enjoy them at restaurants. This looks like worth a try. What would you recommend as substitution to the fava beans as i am not sure i have seen any in India. Thanks.
