Kombdi means,chicken in marathi...wait wait don''t go by name,though the name of the dish sounds non-vegetarian,it''s a pure vegetarian dish.
For Vada Atta: In a pan dry roast all ingredients for atta,separately,then grind to coarse flour and mix together,store in air tight container,remain fresh for a month on self,can be used when required.You can make simple bhakari also with this flour,and pancakes like dosa too,it has multi purpose use.
For Vada: Mix all ingredients for vada batter and ,keep covered for 4-6 hrs in warm place.Then after,fermentation,mix add ons and mix well,if required,sprinkle little bit water,make very soft bread like dough.
Now heat oil,in a deep wok or kadhai,and place,small disc (which is made with wet hands on your palm)and on medium flame fry till golden brown from both the sides.
Serve this hot - hot,fried bread or vada with any veg gravy /korma / sauce / chutney /as it is....delicious...!!!!
NOTE: My VEGAN friends can avoid yogurt,but then they have to use citric acid in it''s place.
i tasted this dish,once my trip back to konkan,they serve this vada,as a bread along with some chicken gravy,but we can always eat this vada with chutney or ketchup,as a starter or snacks.this vadas are very spicy one,but yes one can adjust heat according to their tastes..hope you guys will like it..:)))))))))
